I really don’t think eating low carb is hard. The difficulty comes in when you don’t have a plan and you need food. Like 5 minutes ago.
You want to default back to your old ways. Grab something easy and familiar. Something that doesn’t require much thought.
That is why I love to do these meal plans with photos. I think if you can get 12 easy low carb lunch ideas in your mind, it will be easier for you to come up with something to fill your belly during the lunch hour!

12 Easy Low Carb Lunch Ideas
Before we start this list of 12 easy low carb lunches, I want you to give me a little grace.
All of these pictures were taken at either my kitchen table or my computer desk. I took them on my phone right before I ate the meal pictured. My camera phone and low light are what you are going to see.
When I am hungry and doing a “real deal this is my lunch not a photo shoot for a blog” kind of photo, there is no time for pretties. I just snapped and hoped that an Instagram filter might freshen it up! So use this meal plan guide for your ideas and don’t judge my hangry photography, puh-lease.
I will specify products that I used because I know that people are always looking for new things to try and my THM mamas want to know the “on plan” item you can use.
Here we go.
1. Steak, Peppers And Onions Pita (with Cheese)
A few convenience items make this a really quick and easy lunch.
Saute onions and peppers in olive oil and seasoning. Cook the Steak-Umms (they cook in a minute and a half).
Serve it in a Joseph’s Pita.
2. Pimento Cheese, Mini Peppers and Blueberries with Cottage Cheese
The pimento cheese is just shredded cheese, pimentos and half greek yogurt/half mayo, salt and pepper.
3. Pulled Pork BBQ Ranch Salad
I used leftover Crockpot Zevia Pulled pork to make this salad. The dressing is just sugar free BBQ sauce and ranch.
4. Homemade Pizza Lunchable
I love pizza lunchables. These taste pretty dang close to the real thing. Do you share my guilty pleasure?

5. Burger Salad with All the Fixins
Leftover burger, veggies, cheese and ranch. If I’m going to eat a salad, it needs to taste like a “real” meal & this one fits that bill.
6. Rotisserie Chicken Breast with Yellow Squash and Onions
Veggies were sauteed in olive oil. Rotisserie chicken with some skin.
7. Smoked Salmon Salad with English Cucumbers
I get my packs of smoked salmon from Aldi. It is nice to have a meat that you don’t have to cook. Quick and Easy.
8. Ham, Cheese and Spinach Roll Up
Using the Mission Low Carb tortillas, I wrapped up my favorite sandwich fillings. Served with celery and natural PB
and greek yogurt with blueberries.
9. Smoked Salmon with Joseph’s Crackers
I am the only one that eats smoked salmon in my house so when I buy it, I have to find multiple ways to eat it.
To make the Joseph’s Crackers, cut a lavash bread in pieces. Lightly spray with olive oil and air fry or bake until crispy.
I sprinkle the crackers, my salmon and the cheese with Everything but the Bagel Seasoning.

10. Cobb Salad
Just a traditional salad that combines all of the delicious and rich foods that you can eat on a low carb, keto, THM S diet.
11. Homemade Lunchable
I love eating these at my desk if I need to work through lunch. You can meal prep these early in the week to have for lunches or snacks.
Nuts, cheese, a few blueberries and salami.
12. Pastrami, Mustard & Cheese Roll Up
This roll up was made on a Mission Tortilla. I have also made these roll ups in a piece of cheese to eliminate the
special ingredients. Served with 1/2 cup of cottage cheese and about a 1/2 cup of strawberries.
