Halloween Sugar Cookie Ice Cream Sandwiches
These cute little dessert sandwiches are pretty easy to make with the help of a couple of store bought items. And they are perfectly festive for your Halloween party or just a fun October after dinner treat.
And they are so good! Sometimes the best things are the simplest. Classic flavors of vanilla ice cream and sugar cookies combine to make the perfect canvas for a Halloween inspired dessert.

To make these Halloween sugar cookie ice cream sandwiches, you will need the following:

Mini Sugar Cookies from your Grocery Bakery
Vanilla Icecream
Assembling the Halloween Sugar Cookie Ice Cream Sandwiches
To make this Halloween dessert, it is easier to do a little prep work first.
Prep The Icecream
Allow the icecream to sit out on the counter for a few minutes until it is pretty soft. Using a 6 cup Pyrex dish, spread the soft ice cream into the dish. Fill it until it is about halfway full.
Place the dish into the freezer and freeze until firm.
Cut The Icecream Rounds
Using a circular cookie cutter, cut out ice cream rounds. I use the 2nd smallest cutter from this set and it worked perfectly.
You will need to work quickly to avoid the ice cream from starting to melt which will make it harder to work with.
Don’t worry if they don’t come out perfectly. These sandwiches are very forgiving once the sprinkles are applied.
Assemble and Decorate the Ice Cream Sandwiches
Next, place one ice cream round in the middle of two mini sugar cookies. You can use a butter knife to smooth the edges if you want. I didn’t bother. The sprinkles cover up the imperfections.
Once you have made the Halloween sugar cookie ice cream sandwiches, you need to do the most fun part. Decorate them with those Halloween Sprinkles!
Just pour some sprinkles in a small bowl and slowly roll the edges of the ice cream into the sprinkles. Continue to do so until the desired sprinkle coverage is reached.
Once you complete, place the ice cream sandwiches back into the freezer for a few minutes to help the ice cream firm up again. This is helpful in avoiding messes if you have slow little eaters.
