5 Minute Sugar Free Bananas Foster (THM E/WW)

April 11, 2021 by Stacy Craft Leave a Comment

Craving a sweet treat but want to make healthy choices? This sugar free bananas foster takes 5 minutes to make, is packed with protein and it fits on the Trim Healthy Mama or Weight Watchers plan!

THM E WW Bananas Foster

The first time I ever had bananas fosters was at a restaurant where they would flambe the dessert right at your table. And I was hooked from that point forward.

But now that I live a mostly sugar free lifestyle, a big bowl of ice cream with sugary caramelized bananas didn’t sound like a great choice. Living life without such a yummy dish also sounded like sadness in a bowl so I revamped the traditional bananas foster to be low in calories, fat and without added sugar!

This sugar free bananas foster is sweet enough for dessert but healthy enough that you can eat it for breakfast. And that is just what I do!

5 Minute Sugar Free Bananas Foster

Caramelized Bananas with Greek Yogurt

Before we get into how to make this yummy bowl of caramelized bananas, you want to know if you can eat on your diet plan, right?

For my Trim Healthy Mama’s, this works for an E meal. The fat is 3.3 grams (less than the 5 max for an E meal) and the carbs are within the limit. In fact, it is a little low on the carbs side so you could even have this as a dessert with a paired down E meal (say 1/2 a sandwich on sprouted bread).

For the Weight Watchers crew, I used Watcher’s Point to calculate this recipe at 5 Smart Points. I haven’t done WW in a long time, so you may want to plug the recipe in to your calculator to ensure accuracy.

What Makes This Sugar Free Bananas Foster The Best

  • Quick & Easy – Not having to bake or pull at 20 ingredients and 2 bowls is a win in my book. The cooking time is literally two minutes and the prep time should be less than three. 5 minutes until you are savoring a big bowl of sugar free bananas foster.
  • Bananas Foster Taste without Guilt – This recipe gives you protein from the Greek yogurt, is free of added sugar and has a little healthy fat from the coconut oil. It tastes like a delicious dessert without derailing your goals.
  • Dessert for Any Time of Day – Since this sugar free bananas foster is packed with good for you ingredients, you can eat this healthy treat any time of day!

Must Have Ingredients for Sugar Free Bananas Foster

Firmly Ripened Bananas – The ideal banana for this recipe will be bright yellow with no brown spots. The cooking process will soften the banana slices and if the bananas are overripe, they will be a bit too mushy.

Brown Sugar Substitute – The brown sugar sub keeps this recipe free of added sugar but it also creates that thick, caramelized sauce that you want. Here is my favorite brown sugar substitute.

Thick & Creamy Greek Yogurt – The Greek yogurt has two benefits in this recipe. 1. The thick and creamy consistency helps to make it taste rich and indulgent. 2. It adds protein to your bowl so you can even eat this as a breakfast or a snack.

Tips & Tricks To Make This Recipe Successful At Home

  • Turn Up the Decadence – I love to eat this as a breakfast bowl when using Greek Yogurt but you can swap out the yogurt for a sugar free ice cream to elevate this to a really yummy dessert.
  • Rum & Butter Extract – The extracts really help to give this dish similar flavors to the traditional recipe. But if you don’t have these, add a little vanilla extract instead. I’ve made it many times like that & it is still good.

Keto Blueberry Cobbler with Carbquik

April 4, 2021 by Stacy Craft 1 Comment

This Keto blueberry cobbler with Carbquik is going to be your go to, simple summer dessert this year.

Keto - THM S Blueberry Cobbler

I don’t cook a lot of the same things at my house. In fact, I often say that my tradition is never cooking the same thing twice.

Because I love to try new things, I don’t make the same cake over and over. Switching up the recipe and tweaking something here or there is just my jam.

So when I tell you that I’ve made this Keto blueberry cobbler twice in as many weeks, that should tell you something! The simple list of ingredients and shortcut help with the Carbquik makes this dessert doable on a busy weeknight!

Keto Blueberry Cobbler with Carbquik (THM S)

Keto Blueberry Cobbler - THM S

If you are craving a sweet cobbler dish on your low carb lifestyle, I’ve got you! This recipe is bursting with sweet blueberries that are covered in a buttery crust. Top it with a big scoop of whipped cream and your Keto dessert is served!

What You Need for the Low Carb Blueberry Dessert:

Carbquik cobbler ingredients

  • Wild Blueberries (regular will work too but I love the wild berries)
  • Butter
  • Carbquik
  • Unsweetened Almond Milk
  • Monk Fruit
  • Juice of half a lemon (optional)

Preparing the Cobbler

Preheat the oven to 350 degrees.

In a microwave safe bowl, melt the butter.

Add the Carbquik, almond milk and monk fruit to the melted butter and mix with a spoon until combined.

Spread the mixture into a pie plate or a 9×9 pyrex dish.

Butter & Carbquik mixture

Pour the wild blueberries over the top of the mixture and spread until evenly distributed. Squeeze the juice of half a lemon over the top if desired.

Bake for about 40 minutes. You want the cobbler crust to be a golden brown and some of the blueberries will burst creating a gorgeous color.

Low Carb Sugar Free Blueberry cobbler

Serving the Blueberry Treat

I call this Keto blueberry cobbler with Carbquik a dessert because that is the way that I first prepared it.

To serve as a dessert, top with some FF Reddiwhip (for a THM S treat), homemade whipped cream for Keto or with a low carb vanilla ice cream like Rebel or Halo Top.

But here is where I’m going to throw you a curve ball. Can you eat blueberry cobbler for breakfast? I think you can! Serve it with a big scoop of vanilla Two Good yogurt for some protein and call it a meal.

Trim Healthy Mama S Blueberry Cobbler Dessert Recipe

Is Carbquik Keto & Can I use it on THM?

According to this source, you can use Carbquik on the Keto diet. You just want to watch your serving and don’t eat this whole blueberry cobbler in one sitting!

Ok, great. But is Carbquik on plan for THM? Trim Healthy Mama admins have said that Carbquik can be used as a personal choice S on Trim Healthy Mama.

The Carbquik does not have the purist ideal ingredients that THM strives for. However, you can use it on occasion if you so choose. And it is really good so I choose to do it! (but I’m a self proclaimed THM Rebel)

Strawberry Lemonade Bai Sorbet

September 22, 2019 by Stacy Craft Leave a Comment

A tangy and sweet strawberry lemonade Bai sorbet to satisfy your sweet tooth without added sugar.

Healthy & Sugar Free Strawberry Lemonade Sorbet

Low Carb and THM S Strawberry Lemonade Bai Frozen Sorbet
Soft Serve Strawberry Lemonade

I am really wanting to get into the fall spirit. The kids and I have been making mummy granola bars and Frankenstein brownie bites over here in hopes that fall and Halloween are just around the corner.

But in reality, we had the hottest day of the year here last week and this upcoming week isn’t looking a lot better. A “cold” front is going to lower us down into the high 80’s. Not exactly what I am looking for in a cold front but I guess it beats 100 degrees!

So since it has been so hot and in between my fall decorating, I have wanted something cool and refreshing to end my meals. Last week I made a Bai Mango Sorbet (THM E) and it was so yummy. Since that one turned out so well, I wanted a Trim Healthy Mama S option too.

This Strawberry Lemonade Bai Sorbet is slightly sour and sweet and kind of reminds me of the frozen lemonade cups you can buy at a baseball game or the grocery store.

Strawberry Lemonade Bai Sorbet – THM S or FP

Healthy Sugar Free Strawberry Lemonade Bai Sorbet

I like to create healthy desserts for my family with no added sugar that they will love. This frozen lemonade is a hit with the kids and will have you feeling like summer time is just around the corner.

And you can feel good eating it because it is low carb, has no added sugar and is packed with fruit! So it works for Keto/Low Carb/Trim Healthy Mama and many other healthy eating plans.

Here is what you need to create this fruity, frozen treat!

Ingredients

  • Strawberry Lemonade Bai
  • Frozen Berry Blend or Frozen Strawberries
  • Heavy Whipping Cream (To make lighten this up and make it a THM FP, omit the HWC & Sub Unsweetened Almond Milk)
  • Fat Free Reddi Whip for Garnish (optional, personal choice)

Berry Sorbet Ingredients Using Bai And Heavy Whipping Cream - Keto and Low Carb

Free Weekly THM Meal Plan

Making the Blender Sorbet

Add the frozen berries, Bai and heavy whipping cream to your blender. Blend well until smooth. You can serve immediately for a soft serve consistency.

Bai Strawberry Lemonade Blender Sorbet Dessert

My preferred method is to spread the strawberry lemonade Bai sorbet in a small pyrex dish. Then place in freezer for 30 minutes to an hour.

After freezing for a couple of hours, scoop into a bowl and serve with a squirt of Fat Free Reddi Whip.

Tips for the Perfect Sorbet

Frozen Strawberry Lemonade with Whipped Cream - Keto Dessert Recipe

  • Taming the Sour – The sorbet is sweet and tangy and from the lemonade. Adding the rich and creamy Fat Free Reddi Whip (light blue top) will offset that a bit.
  • Type of Frozen Fruit – I used a mixed berry blend when I made this recipe. The seeds didn’t blend completely in my blender. If that bothers you, you might want to opt for strawberries only. *Update* I made it again using only strawberries & much prefer that method.
  • Freeze Time – Freeze the sorbet for 30 minutes to 1 hour prior to serving for a firmer consistency. You can eat it after 30 minutes in the freezer or even right out of the blender (don’t ask me how I know) for a soft serve version. If you leave it in the freezer too long, it will become solid. Just let it sit on the counter a few minutes to soften up.

Low Carb Dippin’ Dots Copycat Recipe (THM FP)

February 21, 2021 by Stacy Craft Leave a Comment

Love the idea of a simple, make at home ice cream without adding extra sugar? Try this low carb Dippin’ Dots copycat recipe that you can make in just a few minutes. Both kids and adults will love it!

2 Ingredient Low Carb Dippin' Dots

(Affiliate Links are used in this post. A small commission may be paid to me at no extra cost to you and that helps to support this page. Please see my disclosures page for additional information.)

Want the Keto Dippin Dots? Follow the directions but scroll to the bottom for the Cherry Chip variation.

I remember having Dippin’ Dots for the first time as a kid. It was so cool! A bowl of little frozen balls that seemed to magically melt into your mouth and turn into traditional ice cream.

And as an adult now, they really haven’t lost much appeal. Fun food is always a welcome little treat! While shopping the other day, I saw some Wyman’s Frozen Blueberries and Greek Yogurt cups  that kind of reminded me of my old Dippin’ Dots friend.

And while the Wyman’s cups have pretty good nutrition facts, it doesn’t quite fit into my Trim Healthy Mama or low carb lifestyle because of the added sugar. So I made a modified version to eliminate some of that sugar and make a similar product at home for less money.

Need another use for your wild blueberries? Try this hidden veggie oatmeal (THM E).

Low Carb Dippin’ Dots Copycat Recipe (THM FP)

Low Sugar - THM FP Frozen Yogurt & Fruit Dessert

So what are Dippin’ Dots? The dots made by the Dippin’ Dots company are tiny balls of ice cream that are frozen using liquid nitrogen.

But no worries, you won’t need anything like liquid nitrogen to make this low carb Dippin’ Dots copycat recipe. Just some simple, easy to find ingredients that are likely in your low carb fridge right now!

What You Need to Make Healthy Dippin’ Dots

Low Carb Dippin' Dots

You only need two ingredients and a couple of common household supplies to make this low carb Dippin’ Dots copycat recipe.

  • A low carb/low sugar yogurt – I use this one.
  • A fruit that is lower in carbs like berries – Wyman’s Wild Blueberries work great because of their size.

From your kitchen, you will also need:

  • A large baking sheet
  • A piece of parchment paper
  • A small ziplock bag (I use the snack size)

Making the “Ice cream” Dots

Instead of ice cream, these low carb Dippin’ Dots are made with a low carb Greek Yogurt. You can use whatever brand you like but my favorite is the Two Good brand. And for my Trim Healthy Mama friends, it is “on plan.”

To make the dots, start by placing a piece of parchment paper on top of a baking sheet.

Next, fill a snack size ziplock bag most of the way full with yogurt.

Snip off the end of the bag and begin squeezing small dots onto the sheet. Continue until you run out of yogurt.

Frozen Yogurt Dots

How Big Should the Yogurt Dots Be?

Not too big because then they don’t seem as similar to the real Dippin’ Dots.

But if you go too small, they will melt almost immediately which is no good either.

The sweet spot that i found was around the size of a pencil eraser.

Freezing the Low Carb Dippin’ Dots

After you make all your dots, place in the freezer for about an hour.

Serving the Sugar Free Treat

Low Carb No Sugar Added Dippin Dots Ice Cream

To serve, grab your dots out of the freezer, some frozen berries, a spatula and a couple of serving dishes.

Using the spatula, loosen the Greek yogurt Dippin’ Dots from the tray. They should come right off if you used parchment paper.

Scoop a couple of spoonfuls of the yogurt balls into a bowl, add some frozen berries (wild blueberries are awesome because of their small size) and then top with another spoonful or two of the frozen yogurt.

Serve immediately. It has a similar consistency to Dippin’ Dots and then melts in your mouth. It is also free of any additional sugar & you get some fruit in your dessert!

How Many Servings Does the Recipe Make?

Your mileage will vary on this depending on the size of your frozen yogurt dots, size of container that you use and the amount of blueberries or other frozen fruit that you use.

I used a regular sized baking sheet and make the dots about the size of a pencil eraser.

To serve the low carb Dippin’ Dots, I use these 6 oz custard cups.

When using this method, I get 6 oz servings. I fill the cups about 1/2 way with the frozen yogurt balls and then the rest of the way with the blueberries. Gently stir to combine and serve immediately.

Can I Make these Low Carb Dippin’ Dots Ahead?

You can definitely make the dots ahead of time but I would leave them on the baking sheet in the freezer until ready to use.

We mixed up a bowl and put it in the freezer for my husband and they clumped together a bit. So if you want that Dippin’ Dots consistency, it is best to leave the yogurt dots flat on the baking sheet in the freezer until you are ready to consume.

Since these really don’t have to freeze very long, you could make and pop into the freezer before prepping dinner. By dessert, they would be ready to eat.

More Flavor Combination Ideas

I like the vanilla Two Good yogurt with wild blueberries but there are so many other options that you could try as well. Here are a few!

Triple 000 Salted Caramel and Lily’s Chocolate Chips = Chocolate Caramel
*THM: If the yogurt is your only protein source in your meal, you could have this as an S. Otherwise, you would want to only use 1/2 of the yogurt cup in your dots to keep it an S.

Keto Option: Two Good Cherry Greek Yogurt and Lily’s Chocolate Chips = Cherry Chip
*THM: the chocolate chips are an S so it would be best to use this combo when wanting an S snack or as a dessert after your S meal.

Healthy Frozen Cherry Yogurt & Lily's Chocolate Chips - Keto Dessert

Two Good Mango Hibiscus and Frozen Mango = Tropical Paradise
*THM: Adding mango will increase the carbs and turn this into an E treat.

What flavor combination will you use when making this low carb Dippin’ Dots copycat recipe?

Low Carb Strawberry Cheesecake Cups – THM S

February 7, 2021 by Stacy Craft Leave a Comment

These no bake low carb strawberry cheesecake cups are an individual dessert that is easy enough for any day but cute enough to serve to company!

Low Carb Strawberry Cheesecake Cups

Last summer I made some No Bake Strawberry Cups that I made for my Bunko group. They were so yummy but they weren’t sugar or guilt free.

Months have passed and I didn’t forget them. So I went to work on converting it into a Low Carb & Trim Healthy Mama S friendly dessert recipe.

The good news is that it worked & worked beautifully. I personally think that cheesecake is one of the easiest treats to convert to low carb because it has a similar texture and tastes just like the real thing.

Low Carb Strawberry Cheesecake Cups – THM S

These individual low carb strawberry cheesecake cups start with a faux graham cracker crust. The cups are then layered with a sugar free no bake cheesecake, diced strawberries, more cheesecake and topped off with a few more strawberries.

And not only are they good, they are so cute too! The perfect little dessert shooter for a small dinner party & my kids like them too.

I have them planned for our Valentine’s dinner at home this year.

What You Need for No Bake Low Carb Cheesecake Cups

Here are the ingredients that you need for these low carb strawberry cheesecake cups.

  • Wasa Light Rye Crackers
  • Butter
  • Cinnamon
  • Monk Fruit
  • Cream Cheese
  • Heavy Whipping Cream
  • Vanilla Sweet Drops
  • Fresh Strawberries
  • 6 Disposable Cups

Making the No Bake Sugar Free Graham Cracker Crust

Low Carb Graham Cracker Crust Crumbs

To make this low carb graham cracker crust, you will place 6 Light Rye Wasa Crackers into your blender (I break them up a bit first).

Next, add the cinnamon, butter, 2 tbsp of monk fruit & blend until it is in crumb form.

Place two teaspoons of the graham cracker mix into each cup.

Can I Make the No Bake Cheesecake Without the Crust?

Sure! Do whatever you like.

I like the texture of having the crust but it is still  yummy without it! I add one extra layer of strawberries at the bottom when I’m skipping the crust.

Mixing the No Bake Sugar Free Cheesecake

The next step in the low carb strawberry cheesecake cups is to make the cheesecake filling. Thankfully you don’t even have to turn on your oven!

Add your softened cream cheese to a mixing bowl and mix for a minute or so until it is whipped. Next, add the remaining monk fruit, heavy whipping cream and Sweet Drops.

Continue whipping the cream cheese mixture until it becomes well mixed and the whipping cream starts to fluff up.

Filling the Low Carb Strawberry Cheesecake Cups

Low Carb Cheesecake Cups

Place your no bake cheesecake filling into a ziplock bag. Cut off the end and fill each cup about 1/2 way with filling.

Next, add a couple of tablespoons of diced strawberries. Then fill the cups just under the top with additional cheesecake filling. Finish with a few diced strawberries on top.

Cheesecake Chill Time

Low Carb Individual Sugar Free Cheesecakes

Move those little cheesecake dessert cups to the fridge and let them chill for at least an hour. Two hours is really my preference.

I think they are best eaten same day because the strawberries are prettier. But I have eaten these a couple of days later & they still taste good, just not as visually appealing.
