Instant Pot Taco Meat – Keto/THM S

This Instant Pot taco meat is seriously the best that you will ever make! And the best part – it works for your Keto, low carb or Trim Healthy Mama lifestyle. 

Instant Pot Seasoned Taco Meat

My goal to start using and loving my Instant Pot has slowly been becoming a reality. I’ve made chicken stock, shredded Mexican pork, sous vide eggs, southern style veggies and even some desserts. 

And I’m kinda loving it. Finally! I thought it would never happen. But I keep finding myself trying to figure out another recipe to throw in my Instant Pot. I even got rid of my crock pot last week (gasp)! Ok truth be told, I dropped the lid and it broke so it wasn’t really usable anymore but I got rid of it nonetheless. 

So when I was scrolling Pinterest and saw a Taco Bell style taco meat in the Instant Pot, I had to try it. I’ve been a Taco Bell fanatic for as long as I can remember and anytime someone claims a copycat recipe I’m in.

Instant Pot Taco Meat – Keto/THM S

The pin that I saw was written at the blog The Salty Pot. I followed the directions meticulously (subbing in my own seasoning) and it turned out great! I made some small changes to the original to make it work for our family & our Trim Healthy Family lifestyle. 

And I’m telling you, it is good. I don’t know if it is Taco Bell good (because can anyone ever reach that greatness??) but I think you will enjoy it. My husband claimed it to be the best taco meat that I had ever made. The cooking process really infuses the meat with the Mexican seasoning blend giving it much more flavor than letting it simmer 5 or 10 minutes on the stove.

The recipe does have a couple of steps and isn’t exactly a quick recipe. But since it is made in the Instant Pot, you can set it and forget it. It is also a great recipe to make ahead and freeze. More details on how to do that in a minute. 

Step 1: Cooking the Ground Beef

You can use frozen or fresh ground beef in this step. Which is great if you are like me and forget to thaw out your meat!

Frozen Instructions: Add 2-3 lbs frozen ground beef and 1 cup of water to the Instant Pot. Seal and set manual high pressure to 30 minutes. Quick release when complete. 

Fresh Instructions: Add 2-3 lbs fresh ground beef and 1 cup of water to the Instant Pot. Seal and set manual high pressure to 8 minutes for 2 lbs or 10 minutes for 3 lbs. Quick release when complete. 

Step 2: Break up the Cooked Beef

Using a meat masher, break the cooked beef up into small pieces. The first key in my opinion to Taco Bell style beef is that the meat is broken up into very small pieces. 

Now drain the water & grease from the beef. 

Step 3: Taco Seasoning

Now it is time to season the Instant Pot taco meat. Add 1 cup of beef broth and 2 tablespoons of taco seasoning for every pound of ground beef. If you want to use a store bought packet of seasoning, that is 1 packet per pound. 

If you are a Keto or Trim Healthy Mama, try this healthy homemade taco seasoning. You can make a big batch in just a couple of minutes. 

Seal the pot & place on manual high pressure for 30 minutes. 

Step 4: Saute if Needed 

I found that if you use 3 lbs of beef, you don’t really need to do this step. There will be a small amount of liquid left but I left it so that when I warm it back from frozen, there will be a bit of liquid. 

If you use only 2 pounds or want to eat right away vs. freezing, you need to get some of that liquid to evaporate. Turn the pot off & then turn it back on by pushing the saute feature. Allow the liquid to cook off for approximately 15 minutes stirring occasionally.

Step 5: Freezing

If you want to freeze the Instant Pot taco meat for an easy meal later on just let it cool after step 4. Divide it into gallon size ziplock bags in portions that meat your family’s needs. 

Label your bag and lay it flat to freeze. 

To reheat, thaw in fridge and warm it in a skillet or in the instant pot on the saute setting. If you got rid of most of the liquid in the original cooking process, you may want to add 1/4 a cup of beef broth when warming. 

Serve the meat with your favorite taco toppings. 

Make your Taco Meat Even Better!

  • Add Chorizo – Add a package of chorizo during step 3 to the already cooked ground beef. It really helps with flavor and consistency. 
  • Pack it with Veggies – Also in Step 3, you can add 1/2 a bag of frozen cauliflower rice to your ground beef/chorizo mixture. The cauliflower takes on the flavor and color of the meat. Give it a good stir after the second round of pressure cooking is done to mix it all together. My 7 year old and my husband never knew it was there. And that is saying something!

  • 2-3 lbs ground beef
  • 1 cup water
  • 1 cup beef broth
  • 2-3 Packets Taco Seasoning (1 pack per lb) (If using homemade, use 2 tablespoons of seasoning for each lb of beef)

Instructions
  1. Place the fresh or frozen ground beef in the instant pot with 1 cup of water.
  2. Set Manual pressure to high, seal and cook 30 minutes if beef is frozen. Follow the same process but set the time to 8-10 minutes if the beef is fresh. (8 mins for 2 lbs, 10 mins for 3 lbs)
  3. Quick release the pressure & break up the ground beef into small pieces.
  4. Drain off the water and grease from the Instant Pot.
  5. Add 1 cup of beef broth and taco seasonings to the pot.
  6. Set manual pressure to high, seal and cook for another 30 minutes.
  7. If you used 3 lbs of beef, most of the liquid should be absorbed after a quick release of pressure. If you used 2 lbs or have excessive liquid with 3 lbs turn on the saute feature. Saute for 10-15 minutes until most of the liquid is absorbed, stirring frequently.
  8. To Freeze: allow the meat to cool. Separate the taco meat into portions that will feed your family and place into freezer bags. When ready to use, thaw the meat in the fridge. To warm, simply use the saute feature on the Instant Pot or add to a skillet on the stove. You may need to add 1/4 - 1/2 cup of water or beef broth while heating.

9 THM Meals For Off Plan Family – Cook Once

When starting a new way of eating, your family is not always quick to jump on board. Here you will find 9 THM meals for off plan family that is easily adapted for those on plan and following Trim Healthy Mama!

THM Family Meals - Cook One Meal for On & Off Plan

Making two meals for supper is something I’ve never been a fan of (even for my little kids). So I thought I would share how we cook THM meals for off plan family and still only cook one meal. 

Before my husband embraced THM, lost 40 lbs and reversed his Type 2 Diabetes, he ate off plan. I also have and elementary aged child and a toddler as well. And let’s be honest, they might love broccoli today and hate it tomorrow.

Even though I was the only one consistently eating on plan, I didn’t cook multiple meals. I found a way to adapt a main meal to please on plan and off plan family members and now I’m sharing that with you!

9 THM Meals For Off Plan Family – Cook Once

Being able to cook once at dinner time is very important to me. After working all day, cooking two different meals is not in my vocabulary. 

Here are examples of THM meals for off plan family that can be adapted for on plan members and off plan kids or family. It may also work if you want your kids or husband on plan but they have different needs than you.

For example, growing kids that need XO’s or maybe you feel like an E and hubby wants an S. 

We will talk about many possibilities using the same base meals that are all Trim Healthy Mama family favorites. Allowing you to cook once and have your entire family eat! 

Spaghetti 

Spaghetti 2 ways - THM On Plan & Family option

For spaghetti, I do normally have to cook a different base to serve our pasta on but we all eat the same sauce. The exception is if we are all eating Dreamfields because the whole family likes that. 

S Option: Ground beef/Italian sausage meat sauce over Dreamfields pasta, zucchini zoodles, french style green beans or spaghetti squash. 

E Option: Roasted chicken breast with marinara over a lentil pasta. 

XO Option: Ground beef/Italian Sausage meat sauce over lentil pasta.

Off Plan/Kid Option: Regular  pasta with the meat/sauce of your choice. 

Tacos 

Tacos 2 ways - THM On Plan & Family option

For taco Tuesday, let’s first talk about the meat. 

This is the best ever taco meat, made in the Instant Pot. You can easily adapt to use lean ground beef or turkey for an E. 

I use this homemade taco seasoning with Nutritional Yeast. It is easy and cheap to make. Mix up a batch and you will have it ready for several weeks of Tacos. 

S Option: Taco Salad – meat, cheese, olives, sour cream, fajita veggies (peppers & onions) or taco meat on low carb tortilla. 

E Option: Tacos in a Bag (My daughter loves this) 

XO Option: Taco meat plus beans in a low carb tortilla. 

Off Plan/Kid Option: Using the same meat, you could offer regular taco shells/tortillas

Chili 

Chili 2 ways - THM On Plan & Family option

Chili is one that is a bit tougher to do just one meal but you can make it happen. Make Pearl’s Chili from the cookbook.

S Option: Per the book, watch the number of beans you eat. 

E Option: Make Pearl’s chili using extra lean ground meat and add an extra can or 2 of beans (adjusting liquid and adding more if needed)

XO Option: Take the E chili option and serve over hot dogs.

Off Plan Option: Serve whatever chili you make over hot dogs on regular buns. 

Salad Bar 

Salad Bar 2 ways - THM On Plan & Family option

This might not sound incredibly kid friendly but here is how we do it to make it good for kids and adults.

S Option: Leafy greens with bacon, boiled eggs, cheese, nuts.

E Option: Chickpeas or black beans, cranberries, peaches, apples or pineapple (maybe not all on one salad)

XO Option: Black beans, cheese, southwest ranch, chicken 

Off Plan/Kid Option: I make Lunchable style plates for my kids that are not salad eaters. Meats, cheese, raw veggies and regular croutons or crackers (NOP).  

BBQ 

_BBQ 2 ways - THM On Plan & Family option

Our favorite is this recipe made in the crockpot & is a THM FP!

S Option: Pulled pork on a salad with cheese, avocado and nuts or on a low carb tortilla quesadilla style. 

E Option: Pulled pork on sprouted bun. 

XO Option: Pulled Pork on Sprouted Bun with a mayo based slaw.  

Off Plan/Kid Option: Pulled pork on white or wheat bun. 

Sloppy Joes

Slim Sloppy Joes in the THM cookbook are a good option for sloppy joes. Just watch out for canned “sloppy joe” sauces. Most if not all will have sugar and unwanted ingredients.

S Option: Serve on a low carb, plan approved bun. 

E Option: Use an extra lean ground meat and serve on sprouted bread or on plan sourdough!

XO Option: Ground beef (not extra lean) on sprouted bread or sourdough.

Off Plan/Kid Option: Regular bun.

Baked Potato Bar

_Baked Potato 2 ways - THM On Plan & Family option

S Option: N/A

E Option: Baked Sweet Potato or other on plan potato and top with shredded chicken, sugar free bbq sauce or wing sauce and plain Greek Yogurt. The wing sauce is my fave, something about that little bit of sweet and spice.

XO Option: On plan Potato with an S chili or bacon and cheese. 

Off Plan/Kid Option: All of these are kid friendly options, right?!

Pizza

_Pizza 2 ways - THM On Plan & Family option

Friday night pizza is always fun after a long week. A lot of pizza restaurants will make you a pizza in a bowl with no crust but you can make this family fave at home too.

Once you have all your toppings out, it is easy to throw toppings on a variety of crust options. 

S Option: Tortilla Pizzas – Use low carb tortillas. Another option is to put pizza toppings on a salad. 

E Option: N/A (because I can’t figure out pizza without cheese)

XO Option: Pizza toppings and cheese on a sprouted crust or homemade sourdough crust. 

Off Plan/Kids Option: Traditional crust 

Grilled Meat with Sides

_Steak 2 ways - THM On Plan & Family option

S Option: Any S meat (pork chops, steak, chicken quarters or drumsticks) with Cheesy Zucchini, mayo based slaw, broccoli and cheese.

E Option: Grilled Chicken or Pork Tenderloin (the only pork lean enough for an E). Serve with an on plan potato, brown rice or quinoa. 

XO Option: Steak and baked potato. 

Off Plan/Kids Option: Most off plan people that I know would eat the XO option and be perfectly happy. The only off plan thing I can really think of would be an off plan roll/bread.

Low Carb Baked Feta Pasta from Tik Tok

A viral video has tons of people baking cheese and tomatoes and tossing them with pasta for an amazingly easy supper. We  altered the original recipe to make this low carb baked feta pasta from Tik Tok & we aren’t sad about it!

Easy weeknight meals are kinda my love language. Keeping low carb/Trim Healthy Mama/Keto easy is how I stay consistent on the plan. Because let’s face it, no one wants to drag out a cookbook every night.

And this recipe is so simple. It also tastes a little bit fancy which is so nice for a meal that was so easy. If you haven’t made this yet, do it. Like tonight. Seriously.

I made it Saturday night and on Monday I picked up more ingredients from the grocery to make it again!

Low Carb Baked Feta Pasta from Tik Tok

Dump, bake & mix.  Low carb baked feta pasta is that easy. Serve it up with a big salad and a rotisserie chicken breast and you have a full meal with very little effort! 

It looks like this trend started with the FeelGoodFoodie and spiraled from there. And we are pretty happy that she posted it because it is a dinner time game changer.

Trim Healthy Mama S Feta Hack

What You Need: 

  • Feta
  • Cherry Tomatoes 
  • Olive Oil
  • Fresh Basil 
  • Minced Garlic
  • Low Carb Pasta Substitute
  • Rotisserie Chicken (Optional)

What Can I Use For A Low Carb Pasta Substitute? 

Baked Boursin Feta Pasta With Zoodles

There are several options for you if you are trying to avoid the extra carbs in traditional pasta. 

  • Zucchini Zoodles
  • Spaghetti Squash 
  • Palmini Noodles
  • Miracle Noodles
  • Dreamfields Pasta

Baking the Feta & Tomatoes 

In a 9×13 pan, slice a big block of feta lengthwise. Place the cheese in middle of the pan and place cherry tomatoes around the pan. 

Unbaked Feta and Cherry Tomatoes with Olive OIl

Drizzle generously with olive oil and freshly ground pepper. 

Bake at 400 Degrees for 30 minutes. 

Remove from the oven and add 2 teaspoons of minced garlic while it is piping hot. 

Broiled Baked Feta Hack with Tomatoes

Add in a box of cooked Dreamfields. Mix everything well. 

**Note** I would add some pasta and stir. Then add a little more and stir. Just so you don’t have dry pasta.

Sprinkle with fresh Basil and serve! 

If you want to use a rotisserie chicken (and I recommend it!), just slice up some of the warm chicken and serve it on top of the low carb baked feta pasta. 

Low Carb Baked Feta Pasta Tik Tok Recipe with side salad

Don’t Like Feta? 

Whether you don’t like feta or just can’t find it (because EVERYONE is making this low carb baked feta pasta), you can still make a similar dish. 

To make the baked feta pasta without feta, you just need a cheese substitute. Here I made this with Boursin cheese and zoodles. 

Follow the same directions but just sub in your favorite cheese. I think it would be tasty with goat cheese as well.

  • 1 block feta cheese
  • 2 10 oz Cherry Tomatoes (I used one red & one mixed medley)
  • 3-4 tbsp olive oil
  • 1 tsp minced garlic
  • 1 Box Dreamfields Pasta (Can Sub Zoodles, Spaghetti Squash)
  • Fresh Basil (for garnish)
  • Fresh Cracked Pepper (to taste)

  • 1 block feta cheese

Instructions
  1. Preheat oven to 400 degrees.
  2. Place the block of feta in the middle of a 9x13 casserole dish. (I cut the feta lengthwise to make two blocks but you don't have to do this).
  3. Dump in the cherry tomatoes around the cheese and drizzle it all with olive oil and fresh cracked pepper.
  4. Place the dish in the oven and bake for 30 minutes.
  5. While your feta is baking, prepare your low carb noodles or vegetable zoodles according to directions.
  6. Once the baked feta is done, broil for 2 minutes to brown the cheese slightly.
  7. Remove the casserole dish from the oven and immediately add the minced garlic to the pan. Using a spoon gently mix everything together.
  8. Add in your low carb pasta or veggie zoodles to the pan and mix gently.
  9. Sprinkle with fresh basil (dried basil from your spice rack will work in a pinch) & serve immediately.

You might call them “walking tacos” but around here we call them THM tacos in a bag. A little bit of nachos, a little bit of tacos and a whole lotta good. 

Save a plate tonight and eat your Trim Healthy Mama dinner out of a chip bag! The kids think it is hilarious, you do less dishes and everyone likes the way it tastes.

Tacos are kind of a universal favorite. I mean everyone loves tacos right? I know my family does & it is such a simple  meal that doesn’t require a ton of effort from me.

THM Tacos In A Bag - E Meal 

Trim Healthy Mama Taco In a Bag Ingredients 

Here are the items that you need for your taco dinner in a bag.

The Base: 

  • An Individual Bag of Baked Tostitos (E) (These often come in and out of stock on Amazon. Join my THM Deals group – I often update when they are back in stock and on sale!)
  • Lean Ground Turkey (E) Make it like this in the Instant Pot for the most flavorful taco meat ever!

The Toppings:

Walking tacos toppings - THM E

  • Diced Tomatoes (FP)
  • Non-Fat Greek Yogurt (FP)
  • Jalapenos (FP)
  • Salsa (FP)
  • Diced Onion (FP)
  • Shredded Lettuce (FP) 
  • Corn (E)
  • Black Beans (E)
  • Pinto Beans (E)
  • Fat Free Refried Beans (E)
  • Brown Rice (E)

Adding the following toppings would make this recipe a delicious & on plan crossover (XO):

  • Full Fat Cheese (S)
  • Avocado (S)
  • Sour Cream (S)
  • Olives (S)  

The fun thing about walking tacos is that you can customize the bag exactly to your liking and your family can make their dinner just the way they want it. 

And that is even more important on Trim Healthy Mama because no one wants to make multiple meals. Since you choose your toppings, you can make this work for off plan family members or those that want a different fuel than you.

How To Make Your THM Walking Taco Bag 

Tacos in a Bag - Filled - Fun Family Dinner

Making the THM tacos in a bag is an easy weeknight dinner that is fun to eat. My 7 year old thinks it is an incredibly fun way to eat her dinner. 

Here are the items that you need to prepare.

  1. Cook your ground meat, drain grease and season with THM Taco seasoning. (I like this Instant Pot method for the meat) 
  2. Warm or cook any other toppings that need to be prepared (rice/beans/corn). 
  3. Place bowls out with the remaining toppings that you have chosen.

Building Your Taco Bag 

Open an individual bag of baked Tostitos and crush the chips lightly. You just want to break the chips up gently but don’t reduce them to crumbs! 

Start scooping the toppings that you want right into the bag! The chips are an E so if you want to keep it that fuel, only use FP or E toppings.

What’s in My Bag 

I crush my chips a bit and then add in a tablespoon or two of corn and probably around 1/4 cup of fat free refried beans. I don’t measure the beans but that is roughly the amount. 

Next, I add in the turkey taco meat. Then I add the Greek yogurt as a sour cream sub, diced tomatoes, onion, salsa and jalapenos.

With whatever space I have left, I pile in a bunch of chopped baby spinach. As listed, this would be an E meal. 

Full disclosure: I love adding a big sprinkle of shredded cheese for a XO to make this meal even better!

Eating Tacos in a Bag

Now for the fun part! Eating your THM tacos in a bag. 

Grab a spoon and mix your taco meat, veggies and chips together. Scoop up a big spoonful and enjoy eating your dinner right out of a bag. 

Hey – whatever we have to do in order to do less dishes on THM right?!

Avoid Overdoing the Carbs

I listed multiple E toppings that you can throw in your chip bag. But it is important to remember that the chips already have 19g of carbs so you don’t want to go overboard with too many additional E toppings. 

Counting and measuring is something that I despise in a way of eating so you won’t often see me saying that I measured 1/4 a cup of beans and 1/3 a cup of whatever. It isn’t how I eat & thankfully it isn’t what THM preaches. That being said, just be mindful. 

As an example, one bag of chips with 1/4 cup of black beans and 1/4 cup of corn will keep you under the recommended carb limit of 45 grams per meal.  

Last note is for the Trim Healthy Husbands! One bag does not fill my husband up so he eats two. While eating two bags of the chips is not ideal in my eyes, I’m not his keeper! He does go heavier on meat and FP toppings though so numbers wise, it really works out. 

If I am still hungry after eating my taco bag, I usually just make a little side salad with lettuce, meat and FP toppings. 

Want an “S” Walking Taco Bag? 

Not tested yet (tell me if you try it) but I’m thinking an individual bag of pork rinds could work here! Pile it high with cheese, ground beef, sour cream, avocado and black olives. Sounds pretty good to me! 

Or if I want an S meal while my family in having THM Tacos in a bag, I will just make a big salad with the taco meat and toppings.

  • 4 Individual Bags Baked Tostitos
  • 1 lb ground turkey taco meat prepared and divided

Instructions
  1. Open an individual bag of the baked Tostitos and gently crush the chips. Don't crush them to crumbs, just break them up a bit.
  2. Start adding in toppings. Add a portion of cooked ground turkey taco meat and then whatever toppings that you like.
  3. *Remember that if the chips are an E fuel, so if you want to avoid a XO, you will want to add toppings that are either an E or a FP.
  4. Once you have added all of your toppings, use a spoon to gently incorporate everything together. Enjoy your THM Tacos right out of the bag!

I finally downloaded TikTok a couple of months ago after resisting the app for a few reasons. #1. I didn’t need yet another social media time suck in my life & #2. I felt too old!

I’m only in my mid-thirties but it seemed like every tween and teen that I know was spending their time on TikTok so I just decided it wasn’t for me. But peer pressure took over and I wanted to see what it was all about.

And while I’m honestly still not 100% in love, they do have some cool food videos. The latest one is the TikTok tortilla wrap hack. It is basically a tortilla that is cut and wrapped into the cutest little quesadilla that you have ever seen.

But don’t make the mistake that these quesadilla wraps are just for Mexican food. You can put anything into your tortilla. Wrap it, press it & done. A fun meal for the entire family.

Peanut butter and jelly roll ups are something that I make pretty often when I am craving comfort food but want to stay on plan.

By making that classic childhood favorite into a pressed wrap, you transform the sandwich into a gooey, melty delicious mix of peanut butter, jelly and a little bit of crunch!

What You Need for a TikTok Inspired PB&J Wrap Hack

  • Sugar Free Peanut Butter – this is by far the best option out there
  • Simply Fruit Jelly
  • Peanuts
  • Frozen mixed berries
  • Low Carb Tortilla

Steps to Wrapping the Quesadilla

Wrap Hack Quesadilla with PB&J

There are 5 steps to properly prepare a low carb peanut butter and jelly wrap hack quesadilla.

  1. Find the center of the tortilla with the tip of a knife. From the center, cut down to the end of the tortilla.
  2. Fill each quarter of the tortilla with a different filling. For this pb&j wrap, these are the steps.
    1. Start in the lower left quarter and apply a generous spread of peanut butter.
    2. In the top left quarter, apply a thin spread of peanut butter (this helps the toppings stick ) and a handful of peanuts.
    3. In the top right quarter, add a thin spread of peanut butter and a tsp of Simply Fruit jelly. Spread the peanut butter to the edge but keep the jelly in the middle to eliminate spilling when cooking.
    4. For the bottom right quarter, add a small handful of frozen blueberries or mixed berries. You can smear a light peanut butter layer on this section prior to the berries to help seal the wrap.
  3. Starting with the bottom left quarter, fold up over the top quarter. So your peanut butter will lay on top of the peanuts. Next, fold the two triangles on the left over onto the jelly quarter. Finally, fold the three quarters over the frozen berries which will result into one triangle.
  4. Place the wrap into a skillet or a panini press and cook until warm and the outer tortilla has browned slightly.
  5. Enjoy!

Tips for Making the Best Wrapped Quesadilla 

  • This PB&J wrap is best made in a skillet. I love using my panini maker but it makes a pretty big mess pressing out the jelly and fruit. 
  • Consider using these tortillas. They are a little more pliable and easier to fold. 
  • Don’t add too much of any topping. If you overfill, it will spill out and make a big mess! 
  • Considering skipping the peanuts? Don’t! I don’t even like crunchy peanut butter but these add a crunch that makes this wrap amazing.
