Easy and quick are what I need these days in order to stay on track. This creamy, cheesy sauce is rich and decadent (and covers the taste of the cauliflower rice). I know this goes against the new rage of low carb cauliflower rice but I just can’t get on board , UNLESS it is covered in some cheesy goodness! I can get on board with anything that is swimming in cheese and salsa.

This cheesy salsa chicken with cauli rice meal will fit with your Keto/low carb/THM S lifestyle and is also pretty budget friendly! I made it for less than the cost of 2 value meals at a fast food restaurant.

I love this cheesy salsa chicken with cauli rice meal because you only need a few ingredients and they are all pretty shelf stable or long lasting. Pull out some frozen chicken tenderloins, riced cauliflower, a bottle of salsa verde and a block of cream cheese and you are ready to make a quick dinner that will conform with your low carb lifestyle.

30 Minute Keto/THM S Cheesy Salsa Chicken With Cauli Rice

When you start a low carb lifestyle, cauliflower rice is almost always suggested. And while it is a great way to fill up your plate and bulk up your nutrition, I didn’t love it. But I found that if I layer it in delicious cheese and spicy salsa it turns into a great base for chicken. 

And now cauliflower rice finds a way to get into a bunch of my meals & I’m not sad about it! I recently made a really yummy (and totally easy) 20 minute Keto Buffalo Chicken Dip casserole that turns your favorite appetizer into an easy weeknight meal. Pin it here for later.

The first thing you want to do is make sure you have your cream cheese softening up so it will melt nicely in your sauce. Next, get your chicken tenders cooking.

I added a little pepper and some fajita seasoning that I had on hand. If you are a Trim Healthy Mama purist (I am not) you may want to ensure that it fits within the guidelines. I love the overall method of THM but I just kind of go with the flow and don’t mind an off plan ingredient here or there. You could make your own seasoning that would fit into the plan perfectly.

Browned chicken in panGet your chicken completely cooked and then remove it from the pan. Cover it with some foil if you are worried about it getting too cold but the sauce comes together pretty quickly.

Make The Cheesy Queso Sauce:

Next, you want to take your softened cream cheese and cut it into fourths. This will help it to melt a little quicker.

Now you need to add your bottle of Salsa verde. Cook it over medium-low heat until the cream cheese is completely melted.

Once the sauce comes together, add your cooked chicken back on top for a minute or two. Just make sure the sauce and chicken are warm.

While the chicken is mixing with the sauce, put your cauliflower rice in the microwave. Cook according to the directions. Then layer the cauli rice, cheesy salsa verde sauce and chicken. The result is a satisfying cheesy chicken with cauli rice meal that will make you forget about carbs!

Serve It Up:

Cheesy Salsa Verde Chicken Plated The way that I prepared it, there was enough for a dinner and I ate the leftovers for lunch the next day. I did have a bit of unused sauce so if you added more chicken, the sauce could stretch farther since it is so rich. I have also wrapped this meal up into a green salsa queso drenched enchilada that is a family favorite! Pin it!

  • 1 package chicken tenderloins
  • 1 tbsp fajita seasoning
  • 8 oz block of cream cheese (softened)

  • 1 tbsp olive oil

Instructions
  1. Heat olive oil in skillet over medium heat. Add the chicken tenders to the skillet and season with the fajita seasoning. Cook your chicken completely and remove from pan. Cover with foil to keep warm.

  1. Reduce heat to Medium/low.
  2. Cut the softened cream cheese into fourths and add it to the pan.
  3. Add the bottle of Salsa verde.
  4. Stir occasionally until the cream cheese is completely melted and the salsa is well incorporated.
  5. Add the chicken tenderloins on top of the completed sauce for 1-2 minutes to warm it all together.
Recipe Notes

To serve, place 1 cup cooked Cauliflower rice at the bottom of a bowl, spoon the cheesy salsa verde sauce on top of the rice and top with the desired number of chicken tenderloins.

Buffalo chicken dip is something I have made so many times that I can do it with my eyes closed. I even included it in this huge list of Keto friendly dips that you can serve with pork rinds. It is a household favorite around here.

The dip is one obsession. The newish Tyson unbreaded buffalo chicken strips are my other obsession. I slapped them together, added a veggie and created this simple Keto buffalo chicken dip casserole that bakes in just 20 minutes.

20 Minute Keto Buffalo Chicken Dip Casserole (THM S)

Cauliflower rice is combined with traditional buffalo chicken dip ingredients to create a creamy base for this casserole. Next, you layer the super convenient Tyson buffalo strips on top of the cauli rice. Bake it & enjoy. It really is that easy. 

It reminds me of a chicken and rice entree meets buffalo chicken dip appetizer. So so good. 

Here is what you need for this Keto buffalo chicken dip bake:

  • Frozen Cauliflower rice
  • Cream Cheese
  • Wing Sauce
  • Ranch
  • Shredded Cheddar
  • Tyson Unbreaded Buffalo Tenders

And let’s just talk about these Tyson unbreaded buffalo tenders (you’ll thank me later). They are amazing! It is our go to “didn’t cook & have no plan” meal after a busy day. And all my Trim Healthy Mama friends – they are approved and “on plan.”

They are precooked so all you have to do is heat them in the oven or my preferred method, the air fryer. We eat them on salads, low carb tortillas for a quick wrap and even on pasta.

Buffalo Cauli Rice Casserole Prepped

Cooking Keto for One or For Two 

I am listing instructions in the recipe for one person and for a couple. 

My sweet husband despises cauliflower rice and won’t try anything that includes it. So I made this just for me. Since it is so easy & virtually any real cooking, I whipped it up for an easy lunch. 

I’ve also added measurements if you want to make it for two. And if your whole family would eat it (my littles won’t eat spicy or cauliflower or ranch or anything HA), you could easily double the couples recipe to get a casserole that would feed 4. 

Assembling the Low Carb Wing Sauce Chicken Casserole 

Preheat the oven to 375 degrees. Spray your casserole dish with olive oil. (This is the casserole dish that I used when making the recipe for one & it works perfectly.)

Add the cauliflower rice, ranch, buffalo sauce, cream cheese and shredded cheese into the casserole dish and mix until combined.

Next, place the Tyson buffalo strips on top of the cauliflower base.

Bake for 18-20 minutes until the chicken is warm and the cheesy cauliflower is bubbling on the sides slightly. 

Serve with fresh celery for scooping up the extra rice!

Instructions
  1. Refer to either the measurements for a casserole for 1 or 2 people to ensure the correct portions. Double the ingredients for 2 if you want a casserole for a family of 4.
  2. Preheat the oven to 375 degrees.
  3. Combine all ingredients except the chicken in a small prepared casserole dish.
  4. Top the buffalo cauliflower mixture with the frozen chicken tenders.
  5. Bake for 18-22 minutes until chicken is hot and the cauliflower rice is lightly bubbly on the outside.

Keto Instant Pot Orange Brown Sugar Ham (THM S)

This Keto Instant Pot orange brown sugar ham gives you the taste of those sweet holiday hams that we all love but without the sugar and carbs that we want to avoid!

It is that time of year where big holiday meals are on my mind. So we have been having some random Tuesday holiday meal trial runs.

I’ve got my special pumpkin cheesecake ready for dessert (priorities) so I decided to move on to main courses. 

And since this delicious ham is made in the Instant Pot, it is totally doable after work.

We ate this with a side of butter beans and a small sweet potato tonight for a XO meal on Trim Healthy Mama. You could also serve it with Mac N Cheese Zoodles to keep it an S (Keto/Low Carb) meal.

Keto Instant Pot Orange Brown Sugar Ham (THM S)

Spiral Ham for Trim Healthy Mama - S Meal

Holidays are busy and often times the main entree can take up a lot of your cook and prep time.

In this recipe, we utilize our Instant Pot to warm our ham and free up that valuable oven space. Here are all the details on creating this easy Keto Instant Pot orange brown sugar ham. 

Swerve Sugar Free Ham Glaze

All of the holiday hams that come to mind have that amazing sweet brown sugar glaze. But as a Trim Healthy Mama, I wanted a sugar free variety that delivers that same taste without the guilt. 

By using Swerve brown sugar, you get that sweet, syrupy glaze for your ham topping but keep it sugar free. My next obstacle was the orange juice that seems to be in every brown sugar ham recipe.

So we sub the Bai Clementine to give us all the sweet orange flavor but none of the insulin spiking results of regular OJ.

And since you will have a part of the Bai leftover – make sure you make this Orange Creamsicle drink while you are waiting on your ham to cook. It is so good & takes less than a minute to make.

Doubling the Glaze For Bigger Hams

The ham I made tonight was just over 9 lbs. If you have a bigger ham like this, definitely consider making a double batch of glaze. 

I made it as written with the larger ham & it works but I think it would have been even better with more glaze. If your ham is 4-6 lbs, the amount of glaze listed in the recipe should be perfect.

Also, my 9+ lb ham fit but just barely! I stuffed it in but I wouldn’t go any bigger than 9lbs because I don’t think it would go. 

No Pressure Cooker – Can I Bake the Ham Instead?

Of course! Place the ham in a 9×13 roasting pan and cover it with the water and 2-3 tablespoons of the glaze. 

Cover with aluminum foil and bake at 350 Degrees for 10-15 minutes per lb. If you go with this method, you will want to boil the glaze ahead of time and get it nice and syrupy. 

Baste your ham every 20 minutes or so throughout the cooking process. 

Making the Low Carb Instant Pot Holiday Ham

Creating this ham for the holidays (or any day of the week) is easy and worthy of your Thanksgiving or Christmas platter!

Low Carb Honey Glazed Ham

What You Need:

4-6 Lb Spiral Cut Ham
Nature’s Hollow Honey Substitute 
Bai Orange 
Dijon Mustard
Cinnamon
Ground Cloves
Ground Nutmeg

Prepping the Instant Pot

Instant Pot Honey Glazed Ham for Low Carb Diet

This Keto Instant Pot orange brown sugar ham is a dump and go kind of recipe. 

Place the metal trivet into your Instant Pot and insert the ham. I had a ham that was a little over 9 lbs so I really had to stuff it in but it worked. 

Add in the cup of water. 

Prepare the Sugar Free Ham Glaze

Mix the remaining ingredients in a bowl. This is the start of your glaze. Add 2-3 tablespoons on top of your ham and secure the Instant pot cover. 

Seal the pot & set a manual pressure for the amount of time that your ham needs to cook. The formula is 2 minutes per lb of ham so if you have a 6 lb ham, set the timer for 12 minutes. 

While the ham is cooking, prepare the reserved glaze. Place the glaze mixture into a small saucepan and bring it to a boil on the stove. 

Reduce the heat to medium and cook for 3-5 minutes until the mixture is a thicker consistency. Be careful not to let it boil over! Thankfully my hubby caught mine before it made a big mess! 

Holiday Ham plate for Thanksgiving or Christmas Dinner

Natural Release/Quick Release

Allow your Instant Pot to naturally release pressure for 5 minutes & then quick release. Remove the ham from the pot & place it on a platter. 

Carefully pour the warm glaze in between the slices and any extra over the top of the ham. 

Serve immediately (but of course it is also great cold for sandwiches)!

  • 4-6 lb Spiral Cut Ham
  • 1 cup water
  • 1/4 cup Nature's Hollow Honey Substitute
  • 2 tbsp Dijon Mustard
  • 1/2 cup Swerve Brown Sugar
  • 1/4 cup Bai Costa Rica Clementine
  • 1/4 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/8 tsp ground nutmeg

  • 4-6 lb Spiral Cut Ham

Instructions
  1. Place the unwrapped ham in your Instant pot on top of the trivet & add 1 cup water to the bottom.
  2. In a medium bowl, mix the honey substitute, mustard, brown sugar, Bai, cinnamon, cloves and nutmeg.
  3. Spoon 2-3 tablespoons of the mixture over your ham & reserve the remaining sauce.
  4. Set the Instant Pot using the manual pressure cook setting & cook the ham for 2 minutes per lb. So a 6 lb ham would cook for 12 minutes.
  5. Allow the pressure to naturally release for 5 minutes and then quick release.
  6. Once the ham is done (while the pressure is naturally releasing), pour the remaining sauce that you reserved into a small saucepan.
  7. Bring the sauce to a boil and then reduce heat to medium. Cook for about 3-5 minutes. The sauce will thicken up.
  8. Remove the ham from the Instant pot & pour the thickened sauce between the slices of the ham.
  9. Serve the ham with your favorite sides.

Healthy Buffalo Chicken Chili – THM E

A delicious healthy buffalo chicken chili that is packed with flavor, easy to make and a great make ahead freezer meal. 

Trim Healthy Mama Buffalo Wing Chicken Chili

Buffalo wing sauce is an ingredient that I love to cook with, especially when cooking low fat dishes (like Trim Healthy Mama E meals). Why? Because wing sauce adds tons of flavor to a dish without adding a lot of extra fat or calories. 

I like wing sauce on wings of course but there are so many more options. A favorite of mine is to cover shredded chicken in this yummy sauce. Then I use the chicken in quesadillas, wraps, on top of salads and even stuffed into a baked sweet potato (don’t knock it until you try it – the sweet and spicy is amazing). 

So since eating buffalo chicken is kind of a way of life, of course adding it to a big bowl of chili seemed like a good next step. This healthy buffalo chicken chili is packed with veggies, white beans, ground chili and spicy wing sauce!

(The recipe isn’t overly spicy to me but I LOVE spicy – so you can adjust the amount of sauce down if you are worried about the heat level).

Healthy Buffalo Chicken Chili – THM E

Healthy Chicken Hot Wing Chili - THM E

You could use this wing sauce chili on most low fat diets or healthy lifestyles that you follow. We eat by the Trim Healthy Mama plan in my house so if you are a fellow THM (welcome!), this is a THM E meal. 

Since school just started back for my daughter, busy nights are something that comes with this time of year. And if I don’t plan appropriately, I’ll end up in the Wendy’s drive thru after getting her from dance.

Since I know how to eat fast food on plan, that is fine but it gets expensive and sometimes you just want an easy home cooked meal but without a bunch of work. 

And this chili can be made in 3o minutes so it works well for work week dinners. Even better is to make it, freeze it & then just warm it up for busy nights. See below for freezing instructions. 

What You Need:

  • Ground Chicken
  • Carrots
  • Celery
  • Butter
  • White Beans
  • Diced Tomato
  • Homemade Chili Seasoning
  • Wing Sauce

The best part about chili is how easy it is to make! Brown some meat, chop a couple of veggies, dump a can or two & simmer. Dinner done! 

I think that is why I love soup weather so much. That and you cook once and eat for multiple meals or stock your freezer! 

Toppings for Buffalo Chicken Chili 

Dumping a bunch of cheese and crackers on top of a big bowl of chili is something that I started doing as a kid. And old habits die hard. 

But thankfully, you don’t have to give up on topping your healthy buffalo chicken chili! To keep it in E mode for THM, you will just want to use the right toppers so that you don’t move into a XO (crossover) unless you want to. 

“E” approved Chili Toppings:

  • Light Laughing Cow Cheese Wedge (good to melt into the chili for a creamy bowl of chili)
  • Fat Free Greek Yogurt (Plain yogurt is a good sub for sour cream) 
  • Very small amount of Low Fat Cheese (I ususally just skip this & I’m a cheese lover. It really doesn’t need it)
  • Baked Tostitos (On plan & Great to dip with too!) 

Freezer Hot Wing Chicken Chili - THM E

Freezing Chicken Wing Sauce Chili 

Making this healthy buffalo chicken chili is quick and easy to make fresh and the best part is that it freezes really well. So you can make a big batch and freeze part of it for a simple meal at a later date. 

To make it for the freezer, just follow the directions in the recipe. Once it is cooked, you want to let it cool. 

When the soup is cool, fill labeled gallon zip lock bags with the amount of chili that will feed your family a meal. Seal and lay flat in your freezer.

To use: thaw the chili for at least 8 hours in your fridge. Pour the thawed chili into a pot and warm it up. It is already fully cooked so it won’t take long.

  2. Add in the chopped carrots and celery and saute for about 5 minutes until they start to soften.
  3. Add the ground chicken and cook until browned and cooked. through.
  4. Combine the remaining ingredients with the meat and vegetables already cooking.
  5. Bring the chili to a boil then reduce heat to low and cover. SImmer for at least 15 minutes (longer if you like).
  6. Top with desired toppings (Greek yogurt, additional hot sauce or baked tortilla chips) & Serve.

Freezer Meal Buffalo Wing Chicken Chili

Low Carb Chicken Bacon Ranch Wrap – A 5 Minute Meal

A low carb chicken bacon ranch wrap that can be made in 5 minutes. A great option for busy weeknights when you have no time to cook a big meal.

My husband and I were talking about our biggest temptations for going off plan the other day. His top #1 missed food was pizza. He loves it so much and although we do low carb tortilla pizzas a lot, he wants the real deal. Like all the time, he wants it. 

As I was thinking of the food that I miss most, I realized that there isn’t one single food that I just really crave. Convenience is what I miss most about our old life. The ability to whip through a drive through and order a number one without having to do a special order with no bun. Or ordering whatever sounded good from takeout. 

Because after a busy day, sometimes I just want the easiest way to feed my family. And while you can certainly eat low carb (THM S) at a fast food chain, I’ve been working on healthy and ultra simple meals that you can make at home. 

Eating at home saves money for one thing. It also allows you to be totally in control of the ingredients that you use and what you put into your body. And finally we live in a small suburb outside of a major city. Although there are plenty of restaurant options not too far from us, there isn’t really anything that is ultra convenient. So if I have a quick meal, it is actually easier for me to cook something rather than go grab food at a restaurant. 

So I started trying to come up with a list of meals with minimal ingredients that I either typically have on hand or that are easy to grab in a last minute grocery trip. And then, the meal needs to be super quick to make. Like 15 minutes or less from start to fork on the plate. 

The goal is suppers that are literally quicker to make at home than it would be to get in your car and grab a bag of fast food. And these low carb chicken bacon ranch wraps fit all of the criteria for my no time to cook dinner list.

Low Carb Chicken Bacon Ranch Wrap – A 5 Minute Meal

Easy Chicken Bacon Ranch Wrap on Low Carb Mission Tortilla (1)

When I first starting Trim Healthy Mama, I tried to cook every complicated meal out there. Hours of my life were spent in the kitchen, my counters were cluttered with ingredients that I had never heard of the week before and some meals were a big flop after spending a lot of time cooking. 

And you know what that is frustrating and unsustainable. So what did I do? I quit after a week or two. 

I like to think that I am not a quitter but my first approach at THM was so complicated and hard that I couldn’t make it a part of my lifestyle. It was simply a diet that I started and then stopped. 

So to prevent that, I needed some healthy meals that I could make with little effort. Or better yet that my husband could make! I love when he helps out with dinner prep. 

Making this low carb chicken bacon ranch wrap is so tasty and a very quick meal. 

What You Need for Rotisserie Chicken Wrap – THM S 

Ingredients for Chicken Bacon Ranch Wrap (1)

To make this low carb wrap, you need a couple of things that are usually a staple at my house. 

  • Rotisserie Chicken or Shredded chicken (I keep bags of frozen rotisserie chicken or cooked/shredded chicken in my freezer for easy meals)
  • Shredded Cheese 
  • Bacon (To keep this a simple meal, I use the microwavable kind) 
  • Ranch Dressing (this is my fave) 
  • Low Carb Tortillas 
  • Romaine Lettuce 

Assembling the Simple Chicken Rollups 

To make the wraps, start by pulling the chicken off the bone if it is a rotisserie. Alternatively you could also use canned chicken that has been drained. 

Next place one low carb tortilla on a plate. Fill with the desired amount of chicken, cheese, cooked bacon, romaine and ranch dressing. 

Roll the tortilla up like an enchilada and cut it at an angle down the middle. 

Serve it with pork rinds and extra ranch for dipping!

Ingredients
  • 1/3-1/2 chicken breast (From a Rotisserie)
  • 1 Tbsp ranch dressing
  • 2 Tbsp Shredded cheddar cheese
  • 2 Pieces Microwavable Bacon (cooked)
  • 1 Mission Low Carb Tortilla
  • 1 handful Romaine Lettuce

  • 1/3-1/2 chicken breast (From a Rotisserie)
  • 1 Tbsp ranch dressing
  • 2 Tbsp Shredded cheddar cheese
  • 2 Pieces Microwavable Bacon (cooked)
  • 1 Mission Low Carb Tortilla
  • 1 handful Romaine Lettuce
Instructions
  1. Warm the bacon slices in the microwave to crisp them.
  2. Shred the chicken breast and add it to the center of the tortilla.
  3. Top the chicken with the cheese, bacon, ranch dressing and romaine.
  4. Roll up the tortilla and cut in half.
  5. Serve with pork rinds and mini peppers if desired.
