7 Frugal Trim Healthy Mama Dinners

January 4, 2019 by Stacy Craft 2 Comments

Trim Healthy Mama can seem overwhelming and expensive. Eating healthy doesn’t have to cost a ton. Here we have planned 7 Frugal Trim Healthy Mama dinners for your family of 4 (that your non-THM family will actually eat).

7 Frugal Trim Healthy Mama Dinners

When I am following Trim Healthy Mama, I like to keep it really simple. Simplifying the plan helps this working mama of 2 young kids stay sane and eating healthy. Today I am going to share 7 Frugal Trim Healthy Mama Dinners that we eat frequently. They are all quick to prepare, will feed your family of four and are inexpensive.

Eating Cheap On Trim Health Mama Plan

Myth #1: Eating healthy is too expensive! Ya’ll that is fake news! I know you can buy junk food that is cheap. Sure you can buy a frozen pot pie, a can of chips or a box of orange mac n cheese for a $1 or so.

But you can also buy a carton of 12 eggs. Yesterday at Aldi, for less than a $1.50 I found a huge bag of gala apples. So I can eat a hard boiled egg (S) or an apple (E) for snacks and I spent less than $2.50 for both.To make those snacks complete, I would add probably add a lite string cheese or even a slice or two of lean deli meat.

Another tip to save money on THM is to only buy the lite string cheese or the lean deli meat. If you pair your boiled eggs with the lean cheese or meat, you are still getting enough fat from the eggs to make the snack an S. However, you won’t have to buy additional cheese and meat to go with your E snacks like an apple where you can only have the lighter varieties.

I encourage you to open your heart and mind to researching the plan and finding ways that you can do it, even on a tight budget. It may be a little more difficult than just walking into the store and buying whatever you want. However, it is so worth it to have your family eating better foods.

These 7 frugal Trim Healthy Mama dinners will help get you and your family on the right track.

7 Frugal Trim Healthy Mama Dinners

Myth #2. You will be in the kitchen for hours a day on THM. Ok, ain’t nobody got time for that! Whether you are working 40+ hours a week with two little ones at your feet like me or you may be running from the football field to ballet every night, we need quick and easy and THM compliant. That’s not too much to ask, right?

My favorite THM meals are cheap, quick to prepare and something that my whole family will eat. My husband will usually at least partially participate in my Trim Healthy plan so long as I don’t get too crazy with cauliflower or onions (or other things he doesn’t think he likes). My daughter (5) is in that phase where if it isn’t shaped like a chicken nugget, she may or may not eat it. The baby will currently eat anything, so naturally he is my fave.

So, getting my family to eat the food that I prepare can be a challenge. These meals are all things that my family of four eats frequently and for the most part all enjoy. (being 5 can be tough, so her level of love can vary from day to day!)

Trim Healthy Mama Meal Plan

Here is the list of 7 Frugal Trim Healthy Mama dinners that we eat at our house often.

Day One: Cheesy Salsa Verde Chicken with Cauliflower Rice (S)

  • Ingredients: Steam bag of Cauliflower rice, Salsa Verde, cream cheese, Frozen Chicken tenders (1/2 bag)
  • Recipe: My most popular Recipe, read all about it here!
  • Tips: Use mild salsa if you want kids to eat this. The medium is quite spicy. This is a very rich and filling meal. If you want an additional side, I would go with a green vegetable or a side salad.

Day Two: Black Bean Tacos (E)

  • Ingredients: black beans, Mission Low Carb Tortillas
  • Recipe: Warm your black beans and serve in tortillas. Top it with some greek yogurt as a sub for sour cream if you have it, Shred some fresh spinach (you should have some to spare from Day four), some hot sauce and a sprinkle of cheese (go really light if you want it to be an E, too much and you will XO)
  • Tips: This is such a quick meal. It is probably our go to “it is 6:30 and we have no dinner plan” meal. We love it.

Day Three: Whole Baked Chicken, Steamed Vegetables, Sweet Potato (E)

  • Ingredients: Whole Chicken, bag of mixed vegetables, sweet potatoes
  • Recipe: Season and roast your chicken (I use a Rotisserie similar to this but you can do it in the oven or even buy one already cooked from the grocery), Steam the veggies in microwave and cook your sweet potato.
  • Tips: This can be an “emergency” meal if you pick up an already cooked chicken at the store and do your sweet potatoes in the microwave to prevent a drive thru run.

Day Four: Smoked Sausage with Grilled Vegetables, Cheesy Spinach (S)

  • Ingredients: Smoked Sausage, onion, Red, green and yellow Bell peppers, Fresh Spinach, portion of heavy whipping cream, Portion of cheese
  • Recipe: You can find the recipe for the sausage and veggies here. For the spinach, wilt the spinach and cheese it up with the HWC and cheese
  • Tips: I really prefer this with Chicken sausage but Walmart doesn’t have one that fits the plan that I can find (I get it from Aldi). The meal itself is pretty light so make sure you bulk it up with all the veggies. Adding in a zucchini or yellow squash would be good too.

Day Five: Ground Pork and Vegetable Stir Fry (S)

  • Ingredients: Ground Pork, Stir Fry Vegetables
  • Recipe: Just brown your pork, drain any fat and combine with vegetables. Cook until veggies are softened. Add in a tablespoon or so of liquid aminos and some ground ginger (tsp) if you have it.
  • Tips: Very quick meal. You could add in some cauliflower rice if you wanted to bulk this meal up.

Day Six: Grilled Chicken Tenderloins, Fried Radishes, Cheesy Zucchini (S)

  • Ingredients: Remaining 1/2 bag frozen chicken tenders, Radishes, Zucchini, Small portion Heavy whipping cream, portion of shredded cheese
  • Recipe: Just season your tenderloins with what you have on hand, fry radishes in olive oil (save some bacon grease from breakfast for extra flavor) and make the cheesy zucchini
  • Tips: the cheesy zucchini makes it to our plate at least once a week. It took a little convincing to get my girl to try it but it tastes a little like mac n cheese so she gobbled it up.

Day Seven: Turkey Ham & Beans (E)

  • Ingredients: 1/4 – 1/2 of turkey ham, white (Northern) beans
  • Recipe: Easy 15 minute recipe here
  • Tips: Top it off with a little parsley if you have it. This is so easy and my kids always eat it. If you can find sprouted rolls, those are yummy as a side.

Walmart Grocery List

A low grocery bill is great. But I also need my THM grocery list to be easy to get. Going to three different grocery stores is not something I have time to do on a weekly basis.

I do shop at Aldi often, but I know not everyone has access to this store. So I chose to show this meal plan with a Walmart grocery order since I think most people have access to a Walmart. And because I love their free grocery pickup! It saves me so much time and sanity to just pull up to a parking spot and get my food. No getting the kids out of carseats!

Here is exactly what I put in my cart to make the 7 frugal Trim Healthy Mama dinners. This list does assume that you have a few basics like olive oil, seasonings and liquid aminos (I just use regular soy sauce but that is not on plan, you can read how I make the plan work for my budget here).

Also, your family, your meals. These are ideas for basic meals. Add additional veggies or fruit as you see fit. If you buy fruit or veggies in season, you can usually get a serving of 4 for around $1. Also, frozen veggies are almost always available for around $1 a bag.

Walmart Grocery Online Order THM Meal Plan

Walmart Grocery Snip 2

Cost Per Meal

Using this 7 Frugal Trim Healthy Mama Dinners meal plan, the average cost of dinner is $8.15 per meal. That works out to $2.03 per person.

These meals easily feed our family of four which consists of my husband, a 5 year old, a 1 year old and myself. My husband is a pretty big eater and most meals we still have some type of leftovers.

At the end of this meal plan, you should also have about half of the turkey ham leftover, most of the heavy whipping cream, some shredded cheese and some fresh spinach leftover. You could make some yummy omelettes or 2 minute microwave eggs with those ingredients.

More THM Help

If you found these 7 frugal Trim Healthy Mama dinners helpful, here are some other things that may make your THM life easier! As a working mama, easy lunches are a must. Here are 6 THM lunches for work and 5 things to do with leftover chicken for lunch.

Another easy and fairly low cost dinner option is a twist on my popular cheesy salsa verde chicken and cauliflower rice. These Salsa verde chicken enchiladas require just a handful of ingredients and 20 minutes in the oven.

If you want something totally different, try my Granny’s low carb cajun shrimp casserole. She always made it with white rice but I THM’d it by using cauliflower rice. So good!

You can find two other meal plans here & here if this 7 frugal Trim Healthy Mama dinners guide was more your style.

What are your THM goals this year?

THM White Chicken Chili – A Pantry Meal

September 20, 2020 by Stacy Craft Leave a Comment

This THM white chicken chili is a quick and shelf stable meal that you can keep on hand in your pantry for a busy night.

Easy THM E WHite Chicken Chili

A couple of months ago, my husband and I both recommitted to staying on plan with Trim Healthy Mama and it has been going great. He of course lost a ridiculous amount of weight in a tiny amount of time – I’m not bitter! I swear. But I’ve also lost the Quarantine 15 that I gained during the craziness of COVID-19!

(No we didn’t have the virus but my day job has been crazy busy plus just the added stress of learning to live through the changes that the pandemic forced on us like virtual school and being stuck at home caused me to make bad choices for many weeks – lots of wine and takeout)

So now that we are 100% back on plan, I have been cooking a lot. And one of the things that I love to preach about THM is that it doesn’t have to be time consuming or expensive. But what have I been doing lately? Making it super time consuming and expensive. It’s like I have lost my THM morals!

In an effort to cut back spending and even more importantly make life easier, I’ve been trying to find recipes that meet my “I forgot about dinner” criteria. To meet that the recipe needs to be:

  • One that I typically have all items needed on hand (Pantry/Freezer preferably)
  • Quick to make (Less than 30 minutes all in)
  • Inexpensive
  • Family Friendly

This THM white chicken chili recipe fits all of these criteria and it is a tasty way to get in an E meal that seems to be a struggle for many fellow Trim Mama’s.

THM White Chicken Chili – A Pantry Meal

The THM white chicken chili is filled with healthy carbs, it’s low in fat and full of flavor. Best of all? You just dump everything in! No chopping vegetables or cooking really? Just dump and warm. BAM! Dinner is ready!

What is a THM Pantry Meal?

A pantry meal is something that all or most of the ingredients are shelf stable items that you can keep in your pantry for emergency meals when you are out of options. It is a lot easier to resist grabbing fast food or ordering pizza if you know that you have some incredibly easy meal options at your fingertips.

Organizing Your THM Pantry Meals

THM White Chicken Chili Ingredients

To make THM pantry meals work even better, I like to organize a few meals separate from my other pantry items.

Grab a few clear bins (I like these), some chalkboard labels (I wish I could find the ones I just bought ugh!) & create an area in your pantry for pantry meals.

The next step is to create a THM Pantry Meal Pinterest board. You can check mine out here.

Add all the canned/pantry items that you need for a meal and write the recipe name on your reusable chalkboard label. When you get into a dinnertime pinch, grab a pantry meal box, pull up your Pinterest board for the recipe and whip up a quick and easy meal.

Then pat yourself on the back for eating on plan & saving some money in the process by avoiding takeout.

Pantry Meals – What Are They Good For?

Pantry meals can be a great way to add convenience to your Trim Healthy Mama lifestyle. Here are a few times that they might come in handy!

  • When you forgot to thaw anything for dinner
  • Hurricane/Natural Disaster/COVID – Quarantine Disaster Preparedness
  •  Sick Days (prepping easy things to have on hand when you or a family member are sick is key to success)
  • Busy Days when you get home late & need dinner quickly

What You Need for Easy Low Fat Chicken Chili

You only need a few ingredients to make this THM white chicken chili pantry meal recipe.

  • Canned Chicken (You can sub fresh chicken breast if you want but I like to have the canned to make this completely pantry ready)
  • Jar of Salsa
  • 2 Cans White Beans
  • 1 Can Corn
  • Cumin

Take all of these ingredients and put them in your clear bin, label it THM White Chicken Chili and save this recipe to your Pinterest THM Pantry board here.

*I don’t usually put Cumin in my box and just grab it from my spice rack when I make the chili. You could put the amount needed in a small ziplock bag if you wanted it all in your bin but didn’t want your cumin jar held hostage until you decide to make this Trim Healthy Mama chicken chili recipe.

Cooking The THM Chicken Chili

Trim Healthy Mama E Chicken Chili soup

Remember that comment about no chopping and no real cooking from above? I wasn’t kidding. Anyone can make this recipe. Drive Thru Sue’s, I’m talking to you! You can do it.

Here are your super simple, incredibly easy instructions.

Grab your colander & stick it in your clean sink. Open both the cans of beans and dump them in the colander. Rinse the beans and let drain.

Open your can of chicken. Dump it right on top of the beans and let that water drain off. Do the same with the can of corn.

Dump the beans/chicken/corn into your pot. Add the jar of salsa and sprinkle in the cumin.

Bring the mixture to a boil, reduce heat and simmer with lid on for 15 minutes. Stir once or twice.

Toppings for your Trim Healthy Mama White Chicken Chili

THM E Easy White Chicken Chili - Pantry Meal

I have been thinking about adding a couple of Light Laughing Cow cheese wedges to the soup in order to make it a little creamier. If you try it, leave me a comment and let me know how it went!

As far as toppings, just remember that since this is a Trim Healthy Mama E recipe, your toppings need to stay low in fat so that you don’t go into a XO zone. (Confused by S, E & XO? Check out this post that explains it all)f

Topping Ideas:

  • Plain Non-Fat Greek Yogurt (Sour cream Sub)
  • A Small Amount of Reduced Fat Cheddar
  • Sliced Green Onions
  • Crushed Baked Tortilla Chips

Instant Pot Green Chili Mexican Pork – THM FP

August 27, 2020 by Stacy Craft Leave a Comment

This Instant Pot green chili Mexican pork is a quick and easy way to get seasoned pulled pork to use in tacos, enchiladas, stuffed peppers and more. It can even be made into a freezer meal for those super busy weeknights.

Keto THM FP Green Chili Pork - Instant Pot Dump Recipe (1)

A Trim Healthy Mama FP recipe is always welcome in our house! A fuel pull is kind of a blank canvas that can be shaped into whatever type of Trim Healthy Mama meal that you want. And this Instant Pot green chili shredded pork will give you a great start to your favorite Mexican meal.

Stuff a bell pepper with black beans, brown rice and green chili shredded pork for a yummy “E” meal with healthy carbs. Or load up a low carb tortilla with sour cream and cheese for a pulled pork taco that is a perfect “S” or low carb meal. We also love it in enchiladas or even as a salad protein.

And since this recipe is low fat and low carb, it works for many different healthy lifestyles. Whether you follow a low fat diet like Weight Watchers or a low carb lifestyle like Keto, this recipe will work for you!

Instant Pot Green Chili Mexican Pork – THM FP

Shredded Green Chili Instant Pot Pork with Cheese (2)

I have been making this seasoned pulled pork in the crock pot for years. It is really versatile and with only 3 ingredients it is a simple weeknight meal that the whole family will love.

But since it takes around 8 hours in the crock pot, I wanted to see how it would fair in the Instant Pot for those evenings that I forgot to worry about dinner! Does anyone else meal plan like a crazy woman and still end up at least one night a week staring in the pantry at 5:30 with zero ideas? I don’t get it but it happens to me often.

So I pulled out that big pressure cooker that I’m determined to love (even though it wasn’t love at first sight) and dumped in the pork and sauce. And in just over half an hour we had a successful shredded pork dish.

THM Enchilada Sauce

Let’s talk enchilada sauce before we go any further.

Many of the store bought varieties include things like food starch, flour, caramel color and sugar. All of which we don’t want in our pork. Why do they do that?! We just want something easy that we can buy for busy weeknights.

So no one that manufacturers enchilada sauce asked me and it is what it is at the store. But  I really wanted this to be drive thru Sue friendly like those instant pot dump meals that we loved pre-THM.

So while there is not a perfect THM on plan store bought enchilada sauce, the one that I used is the best that I could find and I’m ok with it. If you have read the 5 things I don’t do, you will know that A. I’m not a purist & B. an off plan oil doesn’t make me cringe so long as everything else is on plan and that it is not the first ingredient.

That is the case with this sauce. It uses cottonseed oil which is a vegetable oil and not on plan. The oil is the 4th ingredient and the numbers work so I use it. However, I don’t want to mislead you. An off plan oil makes it off plan regardless of the numbers because ingredients trump numbers on THM.

If you want something that is totally on plan, try Darcie’s enchilada sauce with this recipe. It is simple and could be frozen ahead of time to make life easier later.

Update: I did find this store bought & on plan sauce at Target. It is 100% on plan & I’m going to try it out the next time that I make this Instant Pot Green Chili Mexican Pork recipe. You would need to use 2 cans of sauce if using this variety.

So exciting to have a completely on plan, store bought enchilada sauce!

Ingredients for Instant Pot Mexican Pork

Like all my favorite dump and pressure cook meals, you only need 3 ingredients for this shredded green chili pork.

  • Pork Tenderloin (2 pack)
  • Green Chilis
  • Enchilada Sauce

Ingredients for Mexican Green Chili Pulled Pork (1)

Pressure Cooking Green Chili Pork Tenderloin

The instructions for this recipe couldn’t be easier! Dump in 15 oz of Enchilada sauce, 1 can of chopped green chilis and two pork tenderloins into the Instant Pot. I use the pork tenderloin that comes 2 to a package.

Select the manual pressure cook option and set it for 35 minutes. Allow pressure to naturally release for 10 minutes and then quick release after that.

Pork Tenderloin, Enchilada Sauce & Green Chilis (1)

Shred the pork and allow it to soak up some of the leftover enchilada sauce. You can add additional sauce if needed. I usually get the big can and then save the extra for these no tortilla enchiladas.

You can serve it with shredded cheese to make it Keto/Low Carb or a THM S meal. Or you can eat it as written as a THM FP or low fat meal.

Here we made it into enchiladas by just adding the shredded green chili pork and shredded cheese into a low carb tortilla. Then topped the pan of enchiladas with more enchilada sauce and additional cheese. Bake for 20-25 minutes until hot and bubbly.

Shredded Green Chili Instant Pot Pork Enchiladas

Another option is to stuff this shredded green chili pork into a bell pepper for an E meal. Add in a 1/4 black beans and corn. Place the stuffed pepper into the instant pot with trivet and 1 cup of water at the bottom of pot.

Cook on manual pressure for 10 minutes. Add a small sprinkling of cheese on top and let it melt so that you don’t go into XO.

THM E Stuffed Bell Pepper with Mexican Pork

Does It Freeze Well?

Instant pot green chili Mexican pork freezes beautifully!

I use the package that has two tenderloins per package. One of those tenderloins feeds my family of 4 so I use this recipe as an easy meal prep and freezer prep opportunity.

Shred the first tenderloin and feed your family dinner. We love to take this pork and use it to make enchiladas or stuffed bell peppers!

Shred the second tenderloin and let it cool in the leftover sauce in the Instant Pot. Once cool place the pork and about 1/3-1/2 a cup of the enchilada sauce that it cooked in, into a gallon freezer bag.

When you are ready to use it, place the shredded pork in the fridge while you are at work. Once you get home it should be thawed and ready to use.

I hope you enjoy this Instant Pot green chili Mexican pork low carb recipe! Let me know your favorite way to use the shredded pork.

Low Carb Tortilla Pizza – THM S

July 24, 2020 by Stacy Craft Leave a Comment

Learn how to make a low carb tortilla pizza in just minutes by using a store bought “crust” that is so much cheaper than other Keto pizza crusts.

Low Carb - Keto - THM S Thin Crust Tortilla Pizza for One (1)

Tortilla pizza has been in my life since my college days. They are cheap, easy and taste so good. All the things that a broke college student appreciates.

So since I’ve been eating this meal for so many years, I just figured everyone knew about these little gems. Imagine my surprise the other day when I saw in a Facebook group that there are tons of people that didn’t know how to make tortilla pizzas! If that is you, your pizza life is about to change for the better!

Full disclosure, I don’t eat my pizza the same way that I did in college anymore. I’ve traded in my carb laden version and now enjoy a low carb tortilla pizza with some veggies and still some pepperoni too (A THM S Meal)!

Low Carb Tortilla Pizza – THM S

Skip Pizza Delivery - Low Carb Thin Crust Pizza on Store Bought Crust (1)

I’ve eaten pizza bowls and pizza toppings on pizza for easy Keto/THM S meals. But sometimes you just want to be able to pick up a piece of pizza with your hands but still stick to your low carb lifestyle!

And you don’t want to have to have 10 special ingredients to make some pizza crust that takes 30 minutes to make and may or may not be good. I can’t stand wasting time and money.

That is where the low carb tortilla pizza comes in. A perfectly crispy and thin crust lathered in sauce covered in melted cheesy goodness. It will cure all your pizza cravings!

What You Need to Make A Quick Tortilla Individual Pizza

Low Carb THM S Tortilla Pizza Ingredients to Make At Home (1)

  • Low Carb Mission Tortillas This is your Low Carb THM Pizza Crust
  • Pizza Sauce (Sugar Free)
  • Shredded Cheese
  • Toppings

The fun thing about these pizzas is that everyone in the family can make their own. Which is great in our family because my husband likes meat and cheese. Give me all the onions and olives. And then my kids like cheese.

It is nice for us to all be able to put the things that we like onto our personal pizzas. Plus my kids think it is so fun to make their own.

What Toppings Can You Use?

You can top your low carb tortilla pizza crust with whatever toppings that you normally like on your pizza!

Meat Ideas:

  • Pepperoni
  • Cubed Ham
  • Browned Hamburger Meat
  • Italian Sausage
  • Salami
  • Rotisserie Chicken
  • Bacon

Veggie Ideas:

  • Onions
  • Olives
  • Bell Pepper
  • Mushrooms
  • Roma Tomatoes
  • Fresh Spinach
  • Banana Peppers
  • Jalapenos

Just remember that if you are doing keto that the veggies have some carbs so you will want to take that into account when making your pizza.

Trim Healthy Mama’s you can have pretty much any of these just don’t overdo it on the tomatoes or the onions.

This is also a great meal to make when you have some leftovers in the fridge. The possibilities are endless. Grilled chicken leftovers with a little red onion, sugar free bbq sauce and mozzarella sounds amazing!

Leftover taco meat, olives and cheese would be a great Southwestern style pizza. Or just stick to the classic cheese and pepperoni for a more traditional approach.

Making A Low Carb Tortilla Pizza

Trim Healthy Mama Easy 10 Minute Tortilla Pizza - THM S (1)

So just when you thought life couldn’t get any better now that you have a delicious thin crust pizza, I’m going to tell you how easy these little pizzas are to make.

They are so easy! We eat them a lot for lunch or a last minute dinner for a busy weeknight.

In just around 10 minutes, you can have a yummy, cheesy pizza ready to eat. Hey, that’s way quicker than ordering delivery!

Toast the Tortilla

The first thing you want to do is toast your tortillas in a preheated oven at 350 degrees.

This will help crisp up the crust to that it will be portable and not soggy.

Toasting the tortilla is pretty much the most labor intensive part of the whole pizza making process. Just throw it right on the rack. No need to waste a baking sheet.

You need to watch it closely to make sure they don’t burn. And they burn pretty quick (don’t ask me how I know!)

I typically toast it for 3-5 minutes until lightly browned and firm. It should resemble more of a flat tostada shell after toasting vs. a soft taco shell.

Toasted Mission Carb Balance Tortilla (1)

 Sauce & Toppings

Once the low carb tortilla is toasted, apply the sugar free pizza sauce. A couple of tablespoons will be plenty. Don’t go overboard with the sauce to avoid soggy crust.

Add cheese, meats and veggies. Return to the oven and cook for about 5 additional minutes or until the cheese is melted.

Remove from the oven and cut into slices.

Enjoy your low carb tortilla pizza and an ice cold Zevia cola for a treat that feels sinful but is totally on plan!

Chicken puffs are a staple at our house. Shredded chicken, some combo of cheeses as a binder and then something to create some interest.

In this case it is bacon, can’t go wrong with bacon. We usually call these “puffs” but after making this newest creation, a new name was warranted.

Adding crack chicken to our ordinary puffs made them much more than just a puff. Welcome, crack chicken crescent BOMBS. Because, well, these things are the bomb!

If you read 2.7 seconds on this site, you know that my 4 year old is in that “I only eat chicken nuggets, mac n cheese and McDonald’s” phase. Or I should say that is the phase she wants to be in!

I don’t usually agree with that phase so we negotiate. I find if she tries something she usually likes it so we just have to win the battle to try the new food. Ya’ll she loved these!

Crack Chicken Crescent Bombs

Crack Chicken Bombs - Family Dinner Idea

Let me tell you about these amazing crack chicken crescent bombs. You have probably had crack chicken or at least seen it all over Pinterest.

Crack chicken is shredded chicken, cream cheese, a little cheddar, ranch and some crumbled bacon. There is nothing bad about crack chicken. But you really take it up a notch when you turn the crack chicken into a crescent roll bomb!

Prepare Your Crack Chicken

You can make your crack chicken in a variety of methods. I used my new Instant Pot to make my chicken. But you can also use your crockpot or even a rotisserie chicken.

Using the instant pot, place a package of chicken thighs or chicken breasts into the pot. Add half a cup of chicken broth and a tablespoon of ranch mix on top. As a side note, we really prefer boneless/skinless thighs in this recipe!

For the instant pot, I use the poultry setting and cook for 15 minutes on high pressure. Allow the pressure to release naturally. While your chicken is in the instant pot, set out your cream cheese so that it can soften up a bit.

Cook your bacon while your chicken is cooking. You could use the packaged real bacon bits but actually making the bits will really increase the flavor in your crack chicken crescent bombs.

The Crack Chicken Mixture

In a large bowl, shred your cooked chicken thighs. Next, add the cream cheese, shredded cheese, bacon bits and 1 tablespoon of ranch seasoning to the bowl and mix it all together.

Take one crescent roll triangle and press it out with your fingers just a little. You don’t want to make the dough too thin, but if you press it out a little, it helps get a nice seal on your “bombs.” And let’s face it, no one wants their crack chicken crescent bombs oozing out all their awesome filling so that seal is important.

I usually try to get about 1.5 to 2 tablespoons into each crescent. Then wrap it up like a crescent roll but instead of leaving the edges open, you want to pinch all the way around to make a nice seal. Just keep tugging on dough until you get all the filling contained.

Place the crack chicken crescent bombs on a baking sheet that has been sprayed with non-stick cooking spray.

Bake at 350 degrees for 15 minutes. I usually flip mine over after about 10 minutes so that both sides get browned. I think it helps to make sure you don’t end up with doughy crescents too!

Serve these cheesy crack chicken crescent bombs with mashed potatoes and a big green salad or some green beans.

Especially if you do the chicken in the Instant Pot or Crock pot, you can have this dinner on the table quicker than the pizza delivery guy can get to your house!

We don’t usually have leftover chicken puffs but if you do, they heat up really well for lunch the next day.

Well, if I’m being honest, they heat up well for breakfast too! Surely I am not the only one that likes dinner food for breakfast! A
