Mexican food is my favorite and I’m not willing to NOT eat it while I’m trying to eat healthy. So what do I do? 

Take my favorite meals and trim them up so that they fit into my healthier lifestyle!

Last week these Keto/THM S Cheese and Onion enchiladas were on my plate. This week were these Ah-mazing low-fat 7 layer dip tostada towers!

7 Layer Dip Tostada Tower

If you love 7 layer taco dip, this simple recipe turns your favorite appetizer into a meal without making you feel any guilt. 

Why? Because this stack of double layered tostadas is filled with healthy carbs, low in fat and filled with delicious Mexican flavors.

THM E/Weight Watchers Low Point Ingredients

Baked Corn Tostadas Beans

This recipe fits in a Trim Healthy Mama E Meal (Or WW) because it is low in fat and has healthy carbs. 

  • Baked Tostada Shells
  • Laughing Cow Cheese 
  • Fat Free Refried Beans
  • Lettuce/Tomatoes
  • Non-Fat Greek Yogurt (Sour Cream Sub)

And I am telling you it was so good! Often times these low fat THM E meals leave people feeling dissatisfied. Not the case with this 7 Layer Dip Tostada Tower! 

It tastes sinful but it’s not. 

Wait, We can have Tostada Shells on THM?

Yes, Ma’am! I know I just made your day. 

The key is finding tostada shells that are baked. These are the ones that I used and i found them at my normal grocery store.

How To Make the Mexican Tostadas 

Meatless Bean Tostada - Low Fat - THM E Meal

Warm the tostada shells in the oven for a few minute to warm and crisp up. 

Heat the Fat Free refried beans and enchilada sauce in a medium saucepan. 

Assemble the Tostadas – Serving for 1

Spread 1/2 Laughing Cow Cheese on one tostada shell. 

Spread 1/2 cup of the bean/enchilada mixture on top of the Laughing Cow. 

Next add on shredded lettuce and diced tomatoes. Rotel tomatoes would be yummy and save some chopping time. 

Layer 5 is salsa! I had salsa verde on hand from making Salsa Verde Queso Chicken but you could use a traditional red salsa as well. 

Layer 6 is Non-Fat Greek Yogurt that takes the place of sour cream. 

Layer 7 is a teensy tiny amount of shredded cheese (1 TBSP is what I use). You get plenty of cheesy flavor from the Laughing Cow but the little sprinkling of cheddar is visually appealing to me because cheese is life. 

And tacos, enchiladas, tostadas and nachos all need cheese, right?

After layer 7, start again to build the perfect 7 layer dip tostada tower. In order to keep the fat and carbs within E territory on Trim Healthy Mama, you will want to keep your Mexican tostada stack to 2 layers. So 2 tostadas stacked high with all 7 layers. 

THM E Fat & Carb Limits 

For an E meal you are looking for the following: 

Healthy Carbs – Up to 45 g 

Fat – 5 g 

If you keep the beans to 1/2 cup total and 2 baked tostada shells, you will be at around 42 carbs. Perfect for an E meal. 

The fat in a Pepper Jack Laughing Cow Cheese is 1.5 grams. No fat in the beans, shells, lettuce, tomato or yogurt. Keep your shredded cheese to 1 Tbsp total and you will stay below the fat maximum for an E meal. 

If you only use the shredded cheese on the top layer, it will give the illusion of more cheese. Kinda like the trick to eat your meal on a salad plate to make you feel like you are getting more food because your plate looks fuller.

  • 1 can Fat Free Refried Beans
  • 1/2 can Mild Enchilada Sauce
  • 1 pkg Baked Tostada Shell
Toppings
  • Non-Fat Greek Yogurt
  • Salsa
  • shredded cheese
  • Pepper Jack Laughing Cow Cheese
  • Shredded Lettuce
  • Diced tomatoes
Servings
Ingredients
  • 1 can Fat Free Refried Beans
  • 1/2 can Mild Enchilada Sauce
  • 1 pkg Baked Tostada Shell
Toppings
  • Non-Fat Greek Yogurt
  • Salsa
  • shredded cheese
  • Pepper Jack Laughing Cow Cheese
  • Shredded Lettuce
  • Diced tomatoes
Instructions
  1. Combine 1 can of fat free refried beans with 1/2 a can of enchilada sauce in a medium saucepan to warm.
  2. While the beans/enchilada sauce are warming, warm the desired number of tostada shells in the oven at 350 degrees for about 4-5 minutes.
  3. Take one shell and spread 1/2 of a pepper jack Laughing Cow Cheese triangle.
  4. Next, top the shell with 1/2 cup of the warm bean/enchilada sauce mixture.
  5. Add on desired toppings: Lettuce, tomatoes, greek yogurt (sour cream sub) and salsa.
  6. Place a second tostada on top and repeat layers.
  7. Finish with a small amount of shredded cheese.

Give me Mexican food any day of the week. I absolutely love it. My choices regarding Taco Bell in college I feel sure resulted in my Freshman 15! I was even known to eat my beloved Mexi-melt for breakfast. 

Why did Taco Bell have to get rid of that little gem? I miss it so much. 

Anyway, eating Mexican doesn’t have to be detrimental to your weight loss goals! These Keto cheese and onion enchiladas are filled with gooey cheese and have traditional flavors of my favorite carb laden version. 

It will satisfy your Mexican food need and is so easy to throw together and bake in just a few minutes. Great for busy workday lunches or simple dinners.

Keto Cheese and Onion Enchiladas – THM S

Can’t imagine eating another steak or piece of grilled meat for dinner? 

I love grilled foods but a comfort food casserole or a favorite Mexican style dish is something that I miss when low carbing it. But with very little work, you can have your Mexican food & eat it too! 

It is a great Keto for one meal or you can make a big pan for your entire Keto family. I made 4 for myself for lunch and was very satisfied!

Ingredients: 

To make these Keto cheese and onion enchiladas you need just a few basic ingredients that are easily found at any grocery.

Thin-Medium Sliced Chicken Deli Meat 

Shredded Cheese 

Diced Onions

Enchilada Sauce

Jalapenos (optional for Topping)  

That is it. Short little shopping list!

But wait. Are onions keto?

According to this article, they are in appropriate portions. 

So feel free to add a few to your Keto cheese and onion enchiladas, just don’t eat a whole onion. 

Making the Low Carb Enchiladas

These simple keto cheese and onion enchiladas are so quick and easy to make. 

I threw them together for a quick lunch but they would make a great dinner as well. 

To make the enchiladas, lay a piece of chicken deli meat flat on a cutting board. 

Add a tablespoon or two of shredded cheese and a few diced onions in a vertical line down the deli meat. 

Filling keto enchiladas with Cheese

Roll up the chicken and place into a small Pyrex dish. If you are making this dish for one, this is my favorite small Pyrex dish.

Continue until all enchiladas are made.

Drizzle enchilada sauce over the top of all the enchiladas. 

Top with another sprinkle of shredded cheese.

We have several “no time to think about dinner” meals at our house. The kind of meals that you usually have everything on hand, can make without a cookbook or recipe and that will be ready in just a few minutes. Black bean tacos are one of our faves if we are not eating Keto (and it is a THM E meal if you follow Trim Healthy Mama).

These are meals that I rely on when it is 5:30 and the choice is one of my no brainer meals, ordering something in or letting the kids eat whatever they can throw together. 

The no brainer meals are definitely healthier and cheaper than grabbing take out so it is a win for our bodies and my purse. 

After a few weeks of eating all the carbs (hello quarantine life), I have been working on moving back to making healthier choices. And that got me thinking about creating a list of no brainer Keto meals to add to my weekly rotation. 

Another family favorite quick meal is BBQ Kielbasa over Parmesan Couscous. So this one pan Keto BBQ smoked sausage and cauliflower rice meal is adapted from that old fave.

One Pan Keto BBQ Smoked Sausage And Cauliflower Rice Meal

This no fuss skillet meal quick and easy and uses just 3 common staples in a Keto kitchen. 

Ingredients Needed for BBQ Sausage & Cauli Rice Skillet:

  • Smoked Sausage/Kielbasa 
  • Frozen Cauliflower Rice 
  • Sugar Free BBQ sauce

That is it! Simple ingredients are key in these quick dinners that you can put together for yourself or the family after a long day. 

Want to mix it up? Try a stuffed kielbasa (I used jalapeno cheddar this time).

Add more veggies! Some diced bell pepper and onion would be great. 

Preparing the Keto BBQ Kielbasa and Rice Skillet 

The prep for this dinner is just as easy as the grocery list and it will be on your table in about 15 minutes! 

  1. Prepare the cauliflower rice in the skillet according to the directions. 
  2. When there is 5 minutes left on the cauliflower rice, move the rice to one half of the pan 
  3. Add your sliced sausage to the pan and brown on both sides (about 5 minutes). BBQ Sausage and Cauliflower Rice Low Carb Skillet
  4. Drizzle 2 tablespoons (or to taste) of the sugar free BBQ sauce over the top of the sausage.

  • 1 tbsp olive oil
  • 1 bag frozen cauliflower rice
  • 2 Links Smoked Sausage/Kielbasa
  • 2 tbsp Sugar Free BBQ Sauce

  • 1 tbsp olive oil
  • 1 bag frozen cauliflower rice
  • 2 Links Smoked Sausage/Kielbasa
  • 2 tbsp Sugar Free BBQ Sauce
Instructions
  1. Put 1 tablespoon of Olive Oil in a medium pan and over medium heat.
  2. Add bag of cauli rice, season with salt and pepper to taste and cook for 5 minutes covered.
  3. Uncover and push rice to one side of skillet and add sliced sausage to the other side.
  4. Cook for about 5 minutes or until sausage is lightly browned on both sides. Carefully stir cauliflower rice while browning sausage occasionally.
  5. Add BBQ sauce to the sausage side and cook for about 2 minutes or until warmed through.
  6. To Serve: place a portion of the cauliflower rice in a bowl and top with BBQ sausage.

25 Easy and Frugal  2 ingredient meals to feed your family.

This post was inspired by two things that I have recently been thinking a lot about. 

Incredibly easy meals and cheap meals. Right now there is a lot of uncertainty in our day to day due to this pandemic. 

Many people are not only thinking about frugal meals due to that uncertainty but also just struggling to get certain foods at the grocery store due to people buying more than normal.

This list of two ingredient meals combine just two staple items to create a simple supper for yourself or your family.

25 Frugal Two Ingredient Meals 

While you only need a couple of things to make these easy two ingredient meals, you can always elevate the meal by having a few pantry and fridge staples. 

Things like oil, butter and spices/salt and pepper will help add extra flavor. 

Also, please remember that these could be meals that you use for hard times when your pantry is bare. However, if you can you will want to balance these out with veggies and fruit if you choose. 

Side salads or a bag of frozen veggies make an easy side dish that is still low cost. 

Simple & Cheap 2 Item Recipes

Chicken + Salsa
Place chicken breasts and bottle of salsa in crockpot. Cook for 8 hours on low. Eat plain or serve over rice or in a tortilla.

Baked potato + canned chili

Baked potato + chunky soup

Chicken + Buffalo sauce
Cook in crockpot for 8 hours on low. We like to eat as a quesadilla or plain with a side salad. 

Pork tenderloin + enchilada sauce
Cook in crockpot for 8 hours on low. Eat over rice or stuff into a taco shell. 

Ground beef and baked beans 

Hot dogs and crescent rolls

Can chili over spaghetti

Banana + Egg = Banana Pancakes

Cheese + Tortilla = Cheese Quesadillas

Scrambled egg sandwich

Macaroni + can of chili

Ham and northern beans

Tomato soup + noodles or tortellini

Pork chops + cream of mushroom soup
Cook on low in crockpot for 8 hours. 

Cabbage and sausage

Sausage + Fried potatoes

Chorizo and potatoes

Kielbasa and couscous

Chicken Caesar 
Place chicken breasts and one bottle of Caesar dressing in crockpot on low for 8 hours. Serve with a salad, over rice or on a bun. 

Chorizo and eggs

Chicken + gravy
Chicken breasts, chicken gravy packet and water requested in chicken gravy in crockpot for 8 hours. 

Beef tips + gravy
Same as above but sub Beef and brown gravy.

Black beans +tortillas

Fish Sticks + Tortillas = Fish Tacos!

Aldi Chicken Stir Fry Under $1.50 Per Serving

I recently joined a Facebook group that is all about cheap meals to serve your family and it got me thinking. 

With Christmas coming soon, it always seems like your wallet just has a constant leak! So I decided to try and incorporate a few budget meals in our weekly round up to keep our grocery budget down. 

This Aldi chicken stir fry is so simple to make and only requires 3 ingredients (one of which should be a pantry staple). And you will be able to feed your family for under $1.50 a serving.

Aldi Chicken Stir Fry 

This simple Aldi chicken stir fry has a lot going for it. 

The number one thing is that it is so simple. You can put this together and have dinner on the table in right around 20 minutes. 

The second thing I love is that it only requires 3 ingredients. So it makes it a great option if you don’t have a ton of items in your pantry or if you are making this while on vacation and don’t have your normal pantry to work with.

We always cook in our condo when we go on beach vacations but it can be challenging when you don’t have your pantry staples. This quick Asian recipe solves that issue. 

Ingredients 

Aldi Teriyaki Stir Fry (Frozen Section) 

Fresh Chicken Tenderloins

Some Type of Oil (I used Sesame but Olive oil or Vegetable Oil would work just fine) 

Fusia Asian Teriyaki Stir Fry

Preparing the Asian Stir Fry 

Start by preparing the chicken tenderloins. Add 1 tablespoon of oil into a skillet or wok, 

Add the tenderloins (I used 1/2 the package) and cook over medium heat for 3-5 minutes until the edges start to turn white.

Flip the tenderloins and cook the other side for 3-5 minutes. 

I did sprinkle the tenderloins with a little ground ginger and some black pepper. The veggie stir fry has plenty of flavor so if you don’t have these on hand, don’t worry about it. 

Remove the tenderloins from the skillet when done and set aside. 

Add another tablespoon of oil and the bag of asian veggies and stir fry noodles (set the sauce packet that is in the package aside). Cook covered for 5 minutes, stirring occasionally. 

Add the teriyaki sauce package to the veggies and noodles and stir to combine. 

Continue cooking over medium heat for 5 minutes. 

About 1 minute before the veggies and noodles are done, add the chopped chicken back and stir until covered with sauce. 

Asian Chicken Stir Fry Dinner from Aldi

Serve immediately. 

This fed both me and my husband a generous portion, our 6 & 2 year old a child portion and left enough for one leftover lunch portion. So I would say it feeds about 4, could be 5 if you went with smaller portions and possibly added another side. 

Aldi Chicken Stir Fry Cost Per Serving 

The cost per serving for this quick and easy supper is just under $1.50 per serving. 

That means you could feed your family of 4 a meal for less than $6. 

Frozen Stir Fry $2.99

Fresh Chicken Tenderloins (Approximately 1 lb) – $2.93 
This is sold in a 2 lb package and I will use the rest in our favorite Low Fat Taco Soup with Refried Beans 

2 Tablespoons of Oil – .04 

Total Cost – $5.96

You can’t get a burger and fries for your family of 4 for that, even off the dollar menu. And although the frozen blend could be “cleaner,” you are still getting lots of veggies and protein into your family with this Aldi chicken stir fry meal.

Cook Time 20 minutes

Ingredients
  • 2 tbsp oil, separated (olive oil, sesame oil or vegetable oil)
  • 1 bag Fusia Teriyaki Stir Fry (Aldi Brand)
  • 1 lb chicken tenderloins
  • 1/2 tsp ground ginger (optional)
Cook Time 20 minutes

  • 2 tbsp oil, separated (olive oil, sesame oil or vegetable oil)

  • 1 lb chicken tenderloins

Instructions
  1. Add 1 tbsp oil to a skillet and heat to medium.
  2. Add in chicken tenderloins and sprinkle with ground ginger (if using) and pepper to taste.
  3. Cook for 3-5 minutes until the edges turn white.
  4. Flip the chicken and cook for another 3-5 minute until completely cooked. Remove from pan.
  5. In the same pan, add the other tablespoon of oil to the pan.
  6. Add the bag of frozen vegetables/noodles and cook for 5 minutes covered, stirring occasionally.
  7. Add the sauce packet to the vegetables and continue cooking for another 5 minutes.
  8. While the stir fry veggies/noodles are finishing, chop the chicken into bite sized pieces.
  9. Add the chicken into the skillet with the stir fry and stir to combine.
  10. Serve immediately.
