What I Ate Wednesday on THM – 2/10/21

Here is what I ate Wednesday on THM – 2/10/21.

Breakfast: 2 Poached Eggs, Bacon and 1 Piece of Sprouted bread with a little butter. (S Helper)

Taco Bell Copycat Meximelt - Low Carb

Lunch: Leftovers – Taco Bell Copycat Meximelt. (S)

OMG this was amazing. If you liked Meximelts, you have to try this. Make this taco meat in your Instant Pot & add a package of chorizo to the ground beef. 

In your low carb tortilla, add meat, pico and Taco Bell shredded cheese. Roll up and wrap in a damp paper towel. Microwave for 15 seconds to get it all melty.

Snack: Quest Bar (NOP but many use as a Personal Choice) 

Dinner: Egg Roll In a Bowl Made with Ground Beef & Ground Pork (S)

Here is what I ate Wednesday on THM – 1/27/21.

Breakfast: Hard boiled egg sprinkled with Everything But the Bagel Seasoning, almonds, turkey deli meat and 1 slice of cheese (S) 

Breakfast - Turkey, Boiled Eggs and Almonds

Lunch: 2 Wasa Light Rye Crackers with 1 Light Laughing Cow Cheese wedge split between the two crackers & topped with Buffalo Tuna, broccoli and cucumber with a tablespoon of yogurt ranch and a package of sour raisins (E)
*The buffalo tuna I used has a couple of questionable ingredients but it is all in the <2% section so I don’t mind. You could just take some drained tuna and mix it in buffalo sauce if you wanted.

Breakfast: Peanut Butter & Jelly Wrap Hack (S)

I hopped on the TikTok bandwagon and tried the tortilla wrap hack that has been floating around. I made mine THM of course with on plan peanut butter, on plan jelly, low carb tortilla and peanuts.

Lunch: Taco Salad with Leftover taco meat from our Walking Tacos. (S) 

I made the taco meat in the Instant Pot with homemade THM taco seasoning – amazing!

Dinner: Steak, Sauteed Broccolini and Parm Smashed Roasted Gold Potatoes (XO) 

According to my meal plan, we were supposed to have breakfast for dinner. But at 5:15 my husband declared he was headed to our favorite meat market for a steak because “I seemed stressed” and he wanted to make dinner. 

He was right, I was stressed. And I’ll never turn down dinner made for me or a steak! It is nice for someone else to take on the dinner burden once in a while! 

*The fats from the steak, olive oil on broccolini and parm combine with the carbs from the on plan potatoes making this meal a crossover. I don’t mind a XO once or twice a week & I can still lose weight. Just watch your body & if you stop losing, cut back on XO’s.

I also did not eat this entire monster sized steak so it will make  at least two meals which helps to make an expensive cut of meat a bit more reasonable.

What I Ate Wednesday on THM – 12/2/20

In this post you will find meal ideas, see foods separated by fuel and find budget tips to keep your food budget low & your life in the kitchen simplified. 

Note* I eat dessert directly after my meal so it is the same fuel as the main meal. 

7:00 AM – Coffee with a scant teaspoon of cream and sweetener; 3 Slices of Bacon, Eggs and a piece of sprouted bread.

11:30 AM – Salad with sliced almonds, shredded cheese, two small tomato slices, real bacon bits, a Chick-fil-A grilled chicken breast (that I got for free on the app!) & my favorite bottled ranch.

Dessert –  Two Good Strawberry Yogurt + A tablespoon or so (I didn’t measure) of Bake Believe Milk Chocolate Chips

3:30 – Handful of cashews

6:00 – Korean Beef (a freezer meal but I made it fresh tonight), Mixed Asian veggies and Joseph’s Lavash Bread Egg Rolls

*I made the egg rolls by making a batch of egg roll in a bowl. I then stuffed some of the egg roll in a bowl into 1/4 of a lavash bread. I sprayed it with olive oil & air fryed it for about 8 minute on 385 degrees.

Just a quick reminder, there are some things I don’t do perfectly on THM. I don’t always add in a big protein source for snacks, don’t always eat every 3 hours… I could go on. 

But I do my best to get some veggies in, eat reasonable portions and get some exercise in at least a few days a week. This is a glimpse into what I do on a regular basis (an ordinary Wednesday) and what works for me. 

I’ve lost the 60 lbs I gained while pregnant with my last child & a very large part of that success is due to THM! Feel free to write me a comment if you have any questions!

What I Ate Wednesday on THM – 11/18/20

5:00 – 6:30 AM – 2 cups Coffee with tsp of creamer and 1/4 tsp sweetener. (See Note Below)

6:30 AM – Quaker Instant Oatmeal (the on plan stevia sweetened variety) with 1/3 of a banana.

9:30 AM – Cup of coffee with creamer/sweetener; Leftover Instant Pot ham, cheese slices, cashews and English cucumber slices. (I don’t usually eat a morning snack but after my light breakfast and exercise, I was hungry)

12:30 PM – 2 fried eggs, 2 slices of bacon, 1/2 of a Joseph’s Pita; A Two Good Yogurt with Lily’s Chocolate Chips; A piece of frozen pumpkin ice cream pie.

(I also don’t usually eat a big dessert at lunch but I made this pie last night and it was so good!)

A Note About My Coffee

Coffee. Glorious coffee that gets me up and moving in the morning. 

I don’t necessarily follow the THM rules for coffee (among other rules that I sometimes break). I’m telling you this so that you have an understanding of how things work for me. Not to necessarily encourage you to do it the way that I do.

But to encourage you to try THM, even if you need coffee an hour or so before you eat. I add so little creamer that even when I eat an E meal, it doesn’t push me into a XO. 

So I choose to enjoy my mornings with a cup of coffee and my laptop before the kids get up. It brings me joy so I do it!
