Christmas Reindeer Eggs in a Basket

December 19, 2020 by Stacy Craft Leave a Comment

It is so easy to make Christmas reindeer eggs in a basket. Your kids will get a fun breakfast and you will be happy that they are getting good whole foods without a bunch of sugar.

Rudolph Reindeer Eggs in a Hole

Rudolph the Reindeer Eggs in a Basket

My Dad always made us a breakfast that he called a “one eye.” It was a piece of bread with the middle torn out and a fried egg in the hole. A simple meal that we always enjoyed as kids.

I’ve discovered that what I knew as a one eye is called about a thousand other names by others! According to Wikipedia you might call this dish eggs in a hole, eggs in a frame, one-eyed Jack, Toad in the hole, or gashouse eggs.

And after the Turkey shaped Thanksgiving eggs in a basket were such a hit, I knew a Rudolph version was required for December.

This simple Christmas reindeer eggs in a basket is easy to make without any special ingredients. You probably have everything in your pantry to make this right now.

Christmas Reindeer Eggs in a Basket

Christmas Eggs in a Basket Reindeer Toast

Making easy and fun food for kids is a great way to get those little mouths interested in what you serve on their plate. And when it is shaped like their favorite reindeer, it is definitely a fun morning.

This holiday shaped breakfast is made with minimal sugar (just one M&M for that bright shiny nose) & you could even sub that if desired. It is nice to be able to serve the kiddos a character breakfast that is pretty healthy vs. a big bowl of red and green sugary cereal.

Here is what you need to make some Christmas reindeer eggs in a basket breakfast meals.

Ingredients for Rudolph Egg in a Hole

  • Eggs
  • Bacon
  • Bread
  • Raisins
  • Red M&M’s or even a Dried Cranberry

How to Make Reindeer One Eye Holiday Breakfast

This breakfast is so easy to create. If you can make bacon and eggs, you can make this Christmas reindeer eggs in a basket.

Start by taking a piece of bread and removing most of the middle. You can do this by tearing it out with your hands (my Dad’s preferred method) or using a round cookie cutter.

Bread with Hole for Toad in a Hole Breakfast

Melt about half a tablespoon to a tablespoon of butter in a skillet & place your bread in the skillet over medium heat.

Crack an egg into the hole. You can season with salt and pepper if you like but I don’t when it is for the kids. They are plain Jane eaters.

Egg in a Basket Uncooked

Allow the egg to cook enough to where you can flip the toast/egg combo. Flip it and continue cooking the egg to your desired level. I cook these over hard when for the kids because they don’t like runny eggs.

Once the eggs are done and the toast has browned up some, remove the toast from the pan. Add your reindeer bacon antlers onto the plate and position your bread.

Toad in a Hole Reindeer Breakfast for Children

For the eyes, add two raisins to the bread. Next, place a red M&M or a dried cranberry in the center to represent Rudolph’s nose.

Serve your Christmas reindeer eggs in a basket to your kids and watch them eat up a wholesome holiday breakfast that is actually good for them.

Thanksgiving Turkey Shaped Eggs In A Basket

November 10, 2018 by Stacy Craft Leave a Comment

Learn how to make a cute Thanksgiving inspired turkey shaped eggs in a basket breakfast for the kids this season.

Thanksgiving Turkey Eggs In A Basket for Kids

Thanksgiving Turkey Eggs in a Basket Breakfast for kids

This turkey shaped eggs in a basket was inspired by a breakfast that my Dad made frequently when I was growing up. People call this concoction of toast with a fried egg in the middle a variety of things.

Eggs in a basket, toad in the hole, eggs in a nest are all common. My Dad always called it a “one eye” so when I see this breakfast, one eye is always my first thought.

And a turkey shaped one eye makes this a perfect breakfast before the big Thanksgiving meal for the kiddos.

Thanksgiving Turkey Shaped Eggs in a Basket

Making fun food for my kids is one way that we start getting excited about the upcoming holidays. We have already made these easy turkey shaped bagels with apple feathers and since those went over well, I wanted another cute breakfast treat for the kids.

(ignore the Rudolph pajamas, I try to fight only important battles with 4 year olds)

Kid eating Turkey Shaped Egg in a Basket for Thanksgiving Breakfast

To make these turkey shaped eggs in a basket, start by baking or frying your bacon. I love to bake the bacon because it frees me up to do another task while the bacon is crisping up in the oven.

Eggs in a basket or one eye’s are super easy to make and please even a picky eater. To get the eggs in a basket portion going, start by melting a tablespoon of butter in a skillet over medium heat.

While the butter is melting, take one slice of bread and make a hole in the middle. You can use a cookie cutter, the top of drinking glass or just tear out a hole if that is more your style (that is how my Daddy does it).

Bread with Hole for Toad in a Hole Breakfast

Put the slice of bread into your skillet and crack an egg into the hole. Season with salt & pepper. Cook for about two minutes or until the egg is set up enough for you to flip.

Egg in a Basket Uncooked

Flip the toast/egg combo. Cook until the egg is at your desired method. When I am making this for kids, I cook for another couple of minutes until the egg is over hard (basically boiled in the middle). They don’t like runny eggs.

Once the egg is done, remove it from the skillet. Now you get to turn the eggs in a basket into a turkey. For the eyes, use candy eyeballs or raisins.

For the nose, I used a piece of cheese cut in a small triangle. The gobbler is just a broken piece of bacon.

Turkey shaped egg in a basket with bacon feathers breakfast

Arrange the bacon feathers around the top of your turkey shaped eggs in a basket to complete this yummy Thanksgiving breakfast treat. Would your kids love to see a cute little turkey shaped egg in a basket on their breakfast plate?

Pumpkin Spice Cream Cheese Keto Roll Ups – THM S

October 3, 2020 by Stacy Craft Leave a Comment

Needing a change from the usual bacon and eggs low carb breakfast? These pumpkin spice cream cheese Keto roll ups are oozing with a warm pumpkin filling and fun fall flavors.

Pumpkin Spice Cream Cheese Keto Bread

Years ago I made a version of this recipe with white bread and a bunch of sugar. It was surely delicious but not very healthy.

I decided to redo the recipe and make it Keto/Low Carb/THM S friendly. And since it is the beginning of October, I decided to add some pumpkin spice too. Because everything in October should be filled with pumpkin right?

To be real honest, I didn’t really care for pumpkin much until just a couple of weeks ago. Chocolate and peanut butter are my go to dessert choices but I decided to try it again the other day and have been obsessed lately.

My husband has been laughing because every time he asks what I’m making, it is pumpkin something. I’ve made Keto Peanut Butter Pumpkin Spice Cookies, THM E baked pumpkin oatmeal, Low Carb pumpkin spice crockpot almonds, pumpkin dump cuffin cake and now these pumpkin spice cream cheese keto roll ups for breakfast!

Pumpkin Spice Cream Cheese Keto Roll Ups

Breakfast Pumpkin Spice Cream Cheese Roll Ups - THM S Keto

These take a little bit of work so I like to save them for a Saturday or Sunday morning when I have a little more time. But with that being said, the recipe is not hard.

Making these Keto/THM S starts by using the right type of bread. Thanks to Aldi, the Zero Net Carb bread makes the perfect vehicle for this pumpkin spice cream cheese mixture.

If you follow Trim Healthy Mama, this bread is a personal choice item. I use it fairly frequently and have been actively losing weight. Of course, try it and see if it works for you. You can read more about THM store bought bread options here.

Zero net Carbs - Bread _ Aldi

Here are the things that you will need to make these pumpkin spice cream cheese keto rollups:

  • Cream Cheese (Softened)
  • Pumpkin Puree
  • Pumpkin Pie Spice
  • Brown Sugar Swerve
  • Maple Extract
  • Monk Fruit
  • Aldi Zero Net Carb Bread

Making the Pumpkin Cream Sticks

To make these breakfast sticks, start by trimming the crust off of each slice. (Don’t throw it away, those crusts would make great bread crumbs.)

Trimmed Aldi Zero Carb Bread

Next, using a rolling pin, roll each piece of bread thin.

In a large mixing bowl, combine the softened cream cheese, brown sugar Swerve, pumpkin pie spice and maple extract. Mix until smooth.

Fold in 1/2 a cup of pumpkin puree with a spatula.

Bread Filled

Spread the Filling

Spread about a teaspoon of the cream cheese filling on each slice of bread and roll up jelly roll style. If you fill it too full, just wipe away any that seeps out with your spoon.

Once all of the bread slices are stuffed with the pumpkin cream cheese mix, you are ready for the topping.

Melt the butter in a small bowl using the microwave. In another small bowl, mix the monk fruit and additional pumpkin pie spice.

Butter - Monk Fruit & Pumpkin Pie Spice

Dip each stick in the melted butter and then roll it in the monk fruit/pumpkin pie spice mixture.

Bake at 350 degrees for 20 minutes.

Nutella And Strawberry Puff Pastry

January 17, 2019 by Stacy Craft Leave a Comment

Puff pastry stuffed with Nutella and strawberry sauce for a new take on the traditional chocolate covered strawberry. A Nutella and strawberry puff pastry on your breakfast or dessert table will please everyone in sight!

Valentine's Day Chocolate Covered Strawberry Puff Pastry

Valentine’s Day Treat

The Nutella and strawberry puff pastry was inspired by Valentine’s Day that will be here before you know it (didn’t we just finish Christmas?!). My daughter helped me set out all of our pink and red heart shaped decorations this weekend and it put me in the V-Day mood. And made me want to bake something.

A sweet breakfast treat that would have some flavors often associated with Valentine’s day is what I came up with. And when I think of Valentine’s, I of course think of chocolate. But I also think of big, juicy strawberries drenched in delicious chocolate. And puff pastry is just amazing.

This Nutella and strawberry puff pastry is stuffed with a chocolate covered strawberry filling and also shaped into a cute little heart. Such a cute and easy Valentine’s Day breakfast or even dessert that tastes amazing.

Nutella And Strawberry Puff Pastry

Do you know what I love? A fun, holiday inspired treat that doesn’t take ten years to make. All through out the year we make seasonal treats like Halloween Mummy Cakes and Turkey Egg in a Hole Breakfasts. Keeping with my simple holiday motto, before you know it you will have a sweet V-day treat on the table for your family to enjoy.

Ingredients for Nutella and strawberry puff pastry Breakfast treat

Unfold the puff pastry sheet. Using a rolling pin, gently roll out the first puff pastry sheet. Don’t roll it thin, just spread it out a bit. A couple of firm rolls of the pin horizontal and vertically is all that i did. Do the same for the second puff pastry sheet.

The puff pastry was folded in thirds, so you will see 3 vertical “columns.” The filling is going to go in the middle column. First spread the Nutella out, go light at the top and bottom so that it doesn’t spill out when you wrap it. I used 1/2 cup of nutella between the 2 puff pastry sheet.

Nutella Chocolate Hazelnut spread on puff pastry

If you hate measuring, don’t. Just spread some Nutella! That is the beauty of this Nutella and strawberry puff pastry. It is easy.

Then spread the strawberry topping. I used a tablespoon per pastry.

Create the Puff Pastry Braid

Now you need to cut the pastry so that the braid can be created. I use a pizza cutter. Start on one side and cut until you meet the filling. Skip over the filling and cut the same size on the other side. I try to do about an inch thick but I am not very meticulous and it works out fine.

Fold over first strip of pastry from the left and then the right starting at the bottom. Continue overlapping the strips until you get to the top. You may need to pinch the ends at the top and bottom a little to prevent the filling from spilling.

Place on a greased baking sheet. Gently take the two separate pastry braids and shape them into a heart shape if you want this to have even more of a Valentine theme.

Using a silicone brush, spread a beaten egg over the top of the pastry. This is optional but it gives a nice shine to the top.

Bake the Pastry

Bake at 400 degrees for about 10-15 minutes. Watch it close so that it doesn’t burn on the bottom. Mine was done in about 13 minutes.

Top with a sprinkle of powdered sugar.

Chocolate Strawberry Puff Pastry Treat

I hope you enjoy this Nutella and strawberry puff pastry recipe for Valentine’s Day or anytime you are craving the combo of strawberries and chocolate!

Thanksgiving Turkey Breakfast Bagel

November 8, 2018 by Stacy Craft 15 Comments

A light and healthy breakfast is just what your kids need leading up to Thanksgiving day. This Thanksgiving turkey breakfast bagel is a cute and tasty treat.

Thanksgiving Breakfast Bagel For Kids. Fun breakfast food ideas for kids to make holidays exciting! Cute Turkey shaped breakfast food idea for young kids.

I have one kiddo that doesn’t like to eat. Like ever. My most popular phrase at home is “eat your food.” But if you make her food cute, she all of the sudden shows more interest. These Thanksgiving turkey breakfast bagel treats had her smiling at the breakfast table this week.

Thanksgiving Turkey Breakfast Bagel for Kids

Holiday inspired treats are one thing that I always planned in my head for my kids, before I had kids. I wanted to do fun food and paper plate painting crafts. Handprint keepsakes and cutout cookies with homemade icing and lots of sprinkles.

One thing that I didn’t anticipate pre-motherhood is just how busy and tired I would be in actual motherhood. So in reality my holiday treats usually consist of things that I typically have at home and that I can make super quick.

A Thanksgiving turkey breakfast bagel puts a healthy and fun treat on your table for the kids. You will be giving your kids a fruit, carb source, and dairy in this meal. It is light enough to eat on Thanksgiving morning during the parades on TV but will also keep them full until lunch at school if you make it earlier in the month.

What Do I Need:

Mini Bagels

Cream Cheese (I used a Honey Flavored)

Candy Eyeballs (If you don’t have these, try chocolate chips or raisins)

Candy Corn

Red & Green Apple

Assembling the Thanksgiving Turkey Breakfast Bagel

Fun food, fast. That is what we are after here! To make this cute Thanksgiving turkey breakfast bagel, start by slicing and toasting the bagel.

Let it cool slightly so that the cream cheese doesn’t slide off the turkey’s body. Once it has cooled a bit, spread the cream cheese on one of the bagels. I spread it on just thick enough to cover up the whole in the middle.

Slice the apples.

Now all you need to do is arrange. Place the apple slices around the edge of your turkey peel side up to show those pretty red and green colors off. Finally, add the eyeball, candy corn nose and trim just a teensy piece of a red apple to make the gobbler. Did you know the “gobbler” is actually called a snood? Weird but true according to this article with 10 things you didn’t (need to) know about turkeys.

Thanksgiving Breakfast bagel idea for kids

My daughter’s only complaint was that the Thanksgiving turkey breakfast bagel needed two eyes and not one. I was going for a profile look. And if I know her like I think I do, she was going for two candy eyeballs. I hope you have fun serving these turkey’s up to your kids.
