The Trim Healthy Mama plan works for weight loss but it can seem overwhelming at first.

The biggest complaints that I see on the Facebook groups regarding the plan is the large time and cooking commitment and that it costs too much. With proper planning, both of those can be easily overcome.

Here you will find six Trim Healthy Mama lunches that you can take to work that require little prep work and are fairly economical.

The other complaint that I hear is that it is hard to know which type of meal (S or E) that you are consuming.

Each of these meals will be labelled so that you can easily determine the fuel of the Trim Healthy Mama lunch that you are consuming. And if you want an extra THM S idea, read about my favorite protein packed salad here.

Meal Prep Tip

I don’t like participating in the Sunday meal prep game. My Sundays are for church, family, rest and Pinterest (in that order). If it works for you great but if it doesn’t, here is what I do. I just cook extra of whatever meat that I make for dinner and then incorporate that extra into lunches during the week.

For example, I will have my husband grill a couple of extra chicken breasts which takes no extra time. I also brown my ground beef as soon as I buy it and then freeze it. Doing this makes a lunch with ground beef a cinch to pull together.

6 Trim Healthy Mama Lunches

I am trying to shed some of my leftover baby weight so I am currently sticking with one E meal or snack a day and the rest of my meals fall into the S category. If you are closer to goal weight, you may want to add in extra E meals or even some crossovers.

(That is what works for me. Some people find that more E meals aid in their weight loss. You may have to play around with it to see what works best for you)

Grilled Chicken Salad – THM S

Salad included baby spinach and shredded cabbage, grilled chicken (leftover), boiled egg, shredded cheese, 1/2 an avocado, mini bell peppers and ranch dressing.

Sprouted Ham Sandwich – THM E

Most of my Trim Healthy Mama lunches this week were in the S category. I do try to have at least one E meal or snack a day.

I find incorporating at least some carbs daily prevent me from getting that “Keto Flu” feeling.

This E meal included a sandwich made on sprouted bread (my favorite is from Aldi) with lean ham, laughing cow cheese spread and baby spinach.

As a side, I had baked blue corn tortilla chips with salsa and a small serving of blackberries.

*Edited to Add: these chips have become almost impossible to find. In order for the blue chips to be on plan, they must be the baked variety. No worries, the Baked Tostitos are great and also on plan!

Cheeseburger Salad – THM S

The cheeseburger salad was my favorite lunch all week.

My husband grilled the burgers for this on Saturday but if you had this during the week, you could easily make an extra to warm up during the week for this salad. I’ve also used my air fryer and a frozen burger patty to make this super quick and easy.

I put diced tomatoes, chopped dill pickles, red onion and ranch on this salad. It cured the itch for a burger on a (gasp) bun.

Tuna Salad Stuffed Avocado – THM S

Simply make an easy tuna salad and stuff it in your avocado.

My tuna salad had dill pickles, a little greek yogurt and a little mayo, and boiled eggs (from Easter, hence the blue dye!).

I thought the taste of this was really good but I did add a few pork rinds with this meal to provide a little crunch.

Loaded Pepper Nachos – THM S

I had seen many recipes for this type of lunch floating around the internet and it honestly just never appealed to me.

But one day I had mini peppers and leftover taco meat in my fridge so I gave it a chance. I was really pleasantly surprised at how much I enjoyed it.

Slice your peppers and roast for a few minutes in the oven, top with your warm taco meat and cheese. Cook for just a few minutes to melt the cheese. Then top with avocado, sour cream and salsa. Yum.

You could probably prep this (roast your peppers) and then just warm it up in the microwave if you needed to take it to work.

Pickle Cream Cheese Roll Ups – THM S

I eat this at least once every couple of weeks. I love how simple it is to put together.

Simply spread some cream cheese on a piece of deli ham and wrap a dill pickle in it. Super easy and delicious.

I served it with a side of strawberries and pepperoni chips. If you have never tried pepperoni chips, you are missing out.

Just put the pepperoni slices between two paper towels and microwave for a minute or less until they are crunchy. I like to dip them in wing sauce or ranch.

Easy and quick are what I need these days in order to stay on track. This creamy, cheesy sauce is rich and decadent (and covers the taste of the cauliflower rice). I know this goes against the new rage of low carb cauliflower rice but I just can’t get on board , UNLESS it is covered in some cheesy goodness! I can get on board with anything that is swimming in cheese and salsa.

This cheesy salsa chicken with cauli rice meal will fit with your Keto/low carb/THM S lifestyle and is also pretty budget friendly! I made it for less than the cost of 2 value meals at a fast food restaurant.

I love this cheesy salsa chicken with cauli rice meal because you only need a few ingredients and they are all pretty shelf stable or long lasting. Pull out some frozen chicken tenderloins, riced cauliflower, a bottle of salsa verde and a block of cream cheese and you are ready to make a quick dinner that will conform with your low carb lifestyle.

30 Minute Keto/THM S Cheesy Salsa Chicken With Cauli Rice

When you start a low carb lifestyle, cauliflower rice is almost always suggested. And while it is a great way to fill up your plate and bulk up your nutrition, I didn’t love it. But I found that if I layer it in delicious cheese and spicy salsa it turns into a great base for chicken. 

And now cauliflower rice finds a way to get into a bunch of my meals & I’m not sad about it! I recently made a really yummy (and totally easy) 20 minute Keto Buffalo Chicken Dip casserole that turns your favorite appetizer into an easy weeknight meal. Pin it here for later.

The first thing you want to do is make sure you have your cream cheese softening up so it will melt nicely in your sauce. Next, get your chicken tenders cooking.

I added a little pepper and some fajita seasoning that I had on hand. If you are a Trim Healthy Mama purist (I am not) you may want to ensure that it fits within the guidelines. I love the overall method of THM but I just kind of go with the flow and don’t mind an off plan ingredient here or there. You could make your own seasoning that would fit into the plan perfectly.

Browned chicken in panGet your chicken completely cooked and then remove it from the pan. Cover it with some foil if you are worried about it getting too cold but the sauce comes together pretty quickly.

Make The Cheesy Queso Sauce:

Next, you want to take your softened cream cheese and cut it into fourths. This will help it to melt a little quicker.

Now you need to add your bottle of Salsa verde. Cook it over medium-low heat until the cream cheese is completely melted.

Once the sauce comes together, add your cooked chicken back on top for a minute or two. Just make sure the sauce and chicken are warm.

While the chicken is mixing with the sauce, put your cauliflower rice in the microwave. Cook according to the directions. Then layer the cauli rice, cheesy salsa verde sauce and chicken. The result is a satisfying cheesy chicken with cauli rice meal that will make you forget about carbs!

Serve It Up:

Cheesy Salsa Verde Chicken Plated The way that I prepared it, there was enough for a dinner and I ate the leftovers for lunch the next day. I did have a bit of unused sauce so if you added more chicken, the sauce could stretch farther since it is so rich. I have also wrapped this meal up into a green salsa queso drenched enchilada that is a family favorite! Pin it!

  • 1 package chicken tenderloins
  • 1 tbsp fajita seasoning
  • 8 oz block of cream cheese (softened)
  • 16 oz salsa verde
  • 1 tbsp olive oil

Instructions
  1. Heat olive oil in skillet over medium heat. Add the chicken tenders to the skillet and season with the fajita seasoning. Cook your chicken completely and remove from pan. Cover with foil to keep warm.

  1. Reduce heat to Medium/low.
  2. Cut the softened cream cheese into fourths and add it to the pan.
  3. Add the bottle of Salsa verde.
  4. Stir occasionally until the cream cheese is completely melted and the salsa is well incorporated.
  5. Add the chicken tenderloins on top of the completed sauce for 1-2 minutes to warm it all together.
Recipe Notes

To serve, place 1 cup cooked Cauliflower rice at the bottom of a bowl, spoon the cheesy salsa verde sauce on top of the rice and top with the desired number of chicken tenderloins.

This turkey shaped eggs in a basket was inspired by a breakfast that my Dad made frequently when I was growing up. People call this concoction of toast with a fried egg in the middle a variety of things.

Eggs in a basket, toad in the hole, eggs in a nest are all common. My Dad always called it a “one eye” so when I see this breakfast, one eye is always my first thought.

And a turkey shaped one eye makes this a perfect breakfast before the big Thanksgiving meal for the kiddos.

Making fun food for my kids is one way that we start getting excited about the upcoming holidays. We have already made these easy turkey shaped bagels with apple feathers and since those went over well, I wanted another cute breakfast treat for the kids.

(ignore the Rudolph pajamas, I try to fight only important battles with 4 year olds)

To make these turkey shaped eggs in a basket, start by baking or frying your bacon. I love to bake the bacon because it frees me up to do another task while the bacon is crisping up in the oven.

Eggs in a basket or one eye’s are super easy to make and please even a picky eater. To get the eggs in a basket portion going, start by melting a tablespoon of butter in a skillet over medium heat.

While the butter is melting, take one slice of bread and make a hole in the middle. You can use a cookie cutter, the top of drinking glass or just tear out a hole if that is more your style (that is how my Daddy does it).

Put the slice of bread into your skillet and crack an egg into the hole. Season with salt & pepper. Cook for about two minutes or until the egg is set up enough for you to flip.

Flip the toast/egg combo. Cook until the egg is at your desired method. When I am making this for kids, I cook for another couple of minutes until the egg is over hard (basically boiled in the middle). They don’t like runny eggs.

Once the egg is done, remove it from the skillet. Now you get to turn the eggs in a basket into a turkey. For the eyes, use candy eyeballs or raisins.

For the nose, I used a piece of cheese cut in a small triangle. The gobbler is just a broken piece of bacon.

Healthy Buffalo Chicken Chili – THM E

A delicious healthy buffalo chicken chili that is packed with flavor, easy to make and a great make ahead freezer meal.

Buffalo wing sauce is an ingredient that I love to cook with, especially when cooking low fat dishes (like Trim Healthy Mama E meals). Why? Because wing sauce adds tons of flavor to a dish without adding a lot of extra fat or calories. 

I like wing sauce on wings of course but there are so many more options. A favorite of mine is to cover shredded chicken in this yummy sauce. Then I use the chicken in quesadillas, wraps, on top of salads and even stuffed into a baked sweet potato (don’t knock it until you try it – the sweet and spicy is amazing). 

So since eating buffalo chicken is kind of a way of life, of course adding it to a big bowl of chili seemed like a good next step. This healthy buffalo chicken chili is packed with veggies, white beans, ground chili and spicy wing sauce!

(The recipe isn’t overly spicy to me but I LOVE spicy – so you can adjust the amount of sauce down if you are worried about the heat level).

Healthy Buffalo Chicken Chili – THM E

Healthy Chicken Hot Wing Chili - THM E

You could use this wing sauce chili on most low fat diets or healthy lifestyles that you follow. We eat by the Trim Healthy Mama plan in my house so if you are a fellow THM (welcome!), this is a THM E meal. 

Since school just started back for my daughter, busy nights are something that comes with this time of year. And if I don’t plan appropriately, I’ll end up in the Wendy’s drive thru after getting her from dance.

Since I know how to eat fast food on plan, that is fine but it gets expensive and sometimes you just want an easy home cooked meal but without a bunch of work. 

And this chili can be made in 3o minutes so it works well for work week dinners. Even better is to make it, freeze it & then just warm it up for busy nights. See below for freezing instructions. 

What You Need:

  • Ground Chicken
  • Carrots
  • Celery
  • Butter
  • White Beans
  • Diced Tomato
  • Homemade Chili Seasoning
  • Wing Sauce

The best part about chili is how easy it is to make! Brown some meat, chop a couple of veggies, dump a can or two & simmer. Dinner done! 

I think that is why I love soup weather so much. That and you cook once and eat for multiple meals or stock your freezer! 

Toppings for Buffalo Chicken Chili 

Dumping a bunch of cheese and crackers on top of a big bowl of chili is something that I started doing as a kid. And old habits die hard. 

But thankfully, you don’t have to give up on topping your healthy buffalo chicken chili! To keep it in E mode for THM, you will just want to use the right toppers so that you don’t move into a XO (crossover) unless you want to. 

“E” approved Chili Toppings:

  • Light Laughing Cow Cheese Wedge (good to melt into the chili for a creamy bowl of chili)
  • Fat Free Greek Yogurt (Plain yogurt is a good sub for sour cream) 
  • Very small amount of Low Fat Cheese (I ususally just skip this & I’m a cheese lover. It really doesn’t need it)
  • Baked Tostitos (On plan & Great to dip with too!) 

Freezer Hot Wing Chicken Chili - THM E

Freezing Chicken Wing Sauce Chili 

Making this healthy buffalo chicken chili is quick and easy to make fresh and the best part is that it freezes really well. So you can make a big batch and freeze part of it for a simple meal at a later date. 

To make it for the freezer, just follow the directions in the recipe. Once it is cooked, you want to let it cool. 

When the soup is cool, fill labeled gallon zip lock bags with the amount of chili that will feed your family a meal. Seal and lay flat in your freezer.

To use: thaw the chili for at least 8 hours in your fridge. Pour the thawed chili into a pot and warm it up. It is already fully cooked so it won’t take long.

  • 1 lb ground chicken
  • 1/2 cup baby carrots chopped

Instructions
  1. Start by melting the butter in a large skillet or dutch oven over medium heat.
  2. Add in the chopped carrots and celery and saute for about 5 minutes until they start to soften.
  3. Add the ground chicken and cook until browned and cooked. through.
  4. Combine the remaining ingredients with the meat and vegetables already cooking.
  5. Bring the chili to a boil then reduce heat to low and cover. SImmer for at least 15 minutes (longer if you like).
  6. Top with desired toppings (Greek yogurt, additional hot sauce or baked tortilla chips) & Serve.
